I am currently 35 weeks pregnant so my current goal is to clean out my freezer so that I can stock it with freezer meals. When I find whole chickens at a great price I like to stock up on them and stick them in the freezer for easy future meals. I’ve had this chicken in my freezer for awhile and it’s taking up valuable freezer meal space so I decided to include it in this week’s menu. And this Crock Pot BBQ Chicken is such an easy meal that not only was I clearing out the freezer but I was also providing a great meal for my family that didn’t include a lot of effort!
Only 4 ingredients are needed for this recipe: chicken, BBQ chicken dry rub, onion and BBQ sauce. And that’s it! It really is one of the easiest crock pot meals and is so delicious, too! The chicken will become very tender after cooking and will fall off the bone. I like to serve this with a veggie and some mac and cheese or mashed potatoes. You can’t go wrong with this easy Crock Pot BBQ Chicken!
Crock Pot BBQ Chicken
1 4-6 lb. whole Chicken
1 package of BBQ Chicken Dry Rub
1 small Onion, sliced
1 bottle of BBQ Sauce
After removing your chicken from the package be sure to remove any gizzards that may be inside the chicken. Rinse it off well and then pat dry with paper towels. Sprinkle the chicken with your package of BBQ Chicken Dry Rub and rub it in good. Make sure it’s covered well and sprinkle some on the inside as well.
Place the sliced onion in the bottom of your crock pot then place the chicken on top of the onion.
Cook on low for 7-8 hours then pour half of your bottle of BBQ Sauce on the outside of the chicken and spread well. Cover and cook on low for 15 more minutes. Serve with the remaining BBQ Sauce.
