I am excited to share this new Instant Pot Recipe! If you love corn on the cob but aren’t crazy about heating up the kitchen to boil it on the stove, this Instant Pot Corn on the Cob recipe is for you! It’s so easy and takes a fraction of the time it takes to boil or grill corn on the cob. Scroll down for more and the recipe and enjoy!
Usually corn on the cob goes on sale this time of year and we can get some nice deals (at least here in Oklahoma)! I got these for 16¢ each at my local grocer, right before Memorial Day. We always see some nice sales before Independence Day and just in general on summer weekends as well. I always start by husking my corn on the cob “backwards”, so I had to include this picture. It’s an old kitchen hack, but works beautifully and no giant mess of corn silk all over the counter, you, the floor, you get the idea!
So Just take a very sharp knife, and of course practice knife safety and don’t get in a hurry, but just cut the bottom of the stalk off the cob. You will need to cut slightly above the smaller, tougher part of the stalk to get a nice clean cut. Then, the husk just peels right off and no mess! When husked from the bottom up, the silks come off with the husk for the most part. So much easier than peeling down from the top. Anyway, had to include this time saving tip for anyone who wasn’t aware!! (My knife here is Tovolo and it’s one of my favorites!)
Rinse well and load up your instant pot with the corn! I added salt and the required amount of water in the bottom, just 2 cups. I only made four cobs since there were lots of other sides. You can easily fit 8 I would think. The Instant Pot comes with a steamer trivet but I did not use it. It wouldn’t have fit in there with these full sized cobs, so I just carefully placed them on their ends. Basically with the steam setting you do NOT want the vegetables fully touching the water in the bottom. On end is just fine here.
- 4 fresh corn on the cob
- 2 cups water
- Husk corn and rinse well, remove any bad spots and corn silks
- Add corn to Instant Pot, place on end. Be careful not to let corn fall flat inside Instant Pot if you aren't using a steamer basket or trivet. Add salt if desired.
- Add 2 cups water.
- Turn on Instant Pot to "Steam" setting and set for 4 minutes. Ensure valve is in closed position.
- Instant Pot will take some time to come up to pressure and temperature, do not adjust settings.
- Timer will show up after steaming is in progress.
- After steaming time is done, do a quick release of pressure (be careful, it's hot!) and remove lid.
- Serve with butter, salt and pepper.
I followed my Instant Pot instructions and achieved perfectly tender corn on the cob in just minutes! I did use the Steam setting, although some recipes on the internet say you can use other settings on high heat. I would not recommend this, as the other settings may not achieve optimal flavor. Corn is a vegetable, and the steam setting is designed for vegetables. You may notice the Steam setting starts on “high” heat, and with other settings such as Manual the heat level cannot be adjusted.
