Have you ever had one of those weeks that was just BLAH!?! You know, the week that is filled with the kind of days where if it can go wrong, it will! Welcome to my week. The car won’t start, the milk has gone bad,the weather is nasty, the bills aren’t paid, the kids are sick…you get the picture! We all have these days.

So I’m walking through Walmart, aimlessly looking for what we need (of course I forgot the list I made.) And that’s when I spotted it in the freezer section. My new addition. The light at the end of my gloomy week. Cool Whip Frosting! That’s when inspiration hit me. If I can make it through this week, I deserve cupcakes! I decided that my cupcakes would have to be cheery. So I went with a beach theme. Of course when I’m deciding all of this my 2-year old is trying to escape the cart, but I when mentioned that she was going to help Mommy make cupcakes she instantly behaved better. I gather all the supplies I need to make my “because it’s finally Friday” cupcakes! You can see my whole shopping trip here.

So Friday came, I survived my week and started to make my cupcakes. I crushed up the cookies to make the sand, tinted the Cool Whip Frosting to make the water and even added those cute little umbrellas that are normally in tropical drinks. After everyone made it come from school and work we had our treat! Sometimes you just need a good cupcake! The New Cool Whip Frosting was delightful. I’m not usually a big fan of frosting. When I get store bought cupcakes, I normally scrape it off because it’s too sugary and flavorless. But this was the exact opposite. I bought the cream cheese flavor. It was light and creamy, the perfect combination. 

I’ll have to think of another reason to try the chocolate flavor Cool Whip Frosting….maybe it will be “I washed the clothes, folded them and put them away in the same day!”

    Never tried it but I’m going to now,,,, I did print off the hazelnut jif coupon but it expired yesterday,,,, boo hoo,,, now that stuff is wonderful.
