I have been out of the baby food stage for a couple years now but I’m getting ready to enter it again! Which has me thinking about how I plan on feeding my baby once she’s at that point. Recently, I discovered using Gerber Cereal in recipes! Who knew?!? Add Gerber Cereals to pancakes, smoothies, cookies and many other things to help your little ones get a little extra vitamins without them even knowing! I just made Fruity Oatmeal Muffins for my boys and they had NO idea there was Gerber cereal in them! The muffins were so moist and delicious. I even found myself going back for more! These are great for a quick breakfast or snacks. I used Gerber’s Apple Strawberry Banana baby food this time and they were so yummy! Next time I think I’ll try them with peach or banana! So baby cereal isn’t just for babies anymore! This is a great way to use up your leftover baby cereal or just to get some extra nutrients into your kiddos.
- 1/2 c. sugar
- 1 c. flour
- 1 tsp. cinnamon
- 2 1/2 tsp. baking powder
- 1/2 c. Gerber Oatmeal Cereal
- 1/2 c. milk
- 1 egg
- 1/2 c. butter, melted
- Dash of vanilla
- 1 cup fruit, this can be chunks of fruit or jars of stage 2 babyfood fruit
- **1/3 c. oil only if using chunks of fruit
- Preheat oven to 425 and line muffin tins.
- In small bowl , mix together oatmeal cereal and milk and let soak.
- In a large bowl mix together dry ingredients and mix together egg, butter, fruit, and vanilla (add oil if using fruit chunks) in a medium bowl.
- Add cereal and milk mixture to the egg mixture. Blend well. Add to dry ingredients and mix well. Spoon into greased or lined muffin tins.
- Bake 20 minutes.
