These next couples of months are going to be a busy time for moms and dads as they get ready for their kids to go back to school. Making sure your kids get a good healthy meal is a big part of that routine but can sometimes be tricky. Especially if you have picky eaters.
One of the ways I try to get my kids to eat healthier is to get them involved in the process. here is a picture that I pulled from my Instagram account of some cucumbers that we pulled from our garden. I know, I know , one of them looks gigantic! Note to self, check your garden more often because cucumbers grow extremely fast lol. They love watching them grow, cutting them up and eating them.
Another thing you could do is get creative with their lunches, make sure you change it up often. For example you can do the traditional sandwich but how about taking a cookie cutter and cutting out fun shapes in their sandwiches? Look for healthier versions of their favorite snacks. For example Horizon has cheddar snack crackers made with real Horizon organic cheese. They are even in cute little cow shapes. There are no high fructose corn syrups, artificially flavors, colors or preservatives and they are a good source of calcium.
I used both the Horizon Snack Crackers and cucumbers from my garden for this cute bento box idea. A bento box is a fun idea for school lunches because kids are very visual and if you have a picky eater this is perfect. Picky eaters will love this idea because their food doesn’t touch. I made up a chicken salad recipe and included some chip bowls or scoops instead of bread as a fun way to change up this lunch combination. They can scoop up the chicken salad and kids love to dip.

My children really enjoy Kabobs – easy and tasteful. I use plastic drink stirrers (I choose these because I can stick them in the top rack of the dishwasher and reuse) and layer ham cubes, cheese cubes and black olives (their favorite). I have also done fruit kabobs using a variety of fruits. Would be easy to possibly add some veggies to them as well (if I cold get my kids to eat them). I go the easy route and buy the ham and cheese in cubes but it would be completely possible to cut up left overs or a block of cheese into cubes to cut down on the pre-packages processed items. Its a nice change from a sandwich.
