I’ve got a great recipe for your next Taco Night! We’ve been trying to eat healthier so when I came across these Healthy Cilantro Chicken Tacos I knew I had to give it a try. I’m so glad I did! It’s a nice change from regular tacos and the flavor of the chicken is delicious! I used shredded cheese, spinach, diced tomatoes, and light sour cream for the toppings but you can use whatever you’d like – stick with traditional taco toppings or think outside the box!
- 1 1/2 lbs. chicken tenderloins, cut into chunks
- 1/4 c. red wine vinegar
- 1 lime, juiced
- 1 1/2 tsp. sugar
- 1 tsp. salt
- 1 tsp. ground pepper
- 2 cloves garlic, minced
- 1/2 c. fresh cilantro, chopped
- Whole Wheat tortillas
- Diced tomatoes
- Shredded cheese
- Sour Cream
- Over medium high heat saute chicken until browned. Add vinegar, lime juice, sugar, salt, pepper and garlic. Simmer 10 mins. or until cooked through. Add the cilantro and simmer for less than a minute.
- Serve on warm tortillas with toppings. Enjoy!
