Rice is a staple in our house. We have it a few times a week. It's gluten free, cheap, filling, easy to make and very versatile. This Parmesan Spinach Rice is one of my favorite way to make it. When ever I have extra spinach or find it on sale  I use it up in this rice. The best part is my kids don't even complain about eating it. It shrinks down so much they don't even really notice it. So if you are trying to get more veggies in your diet give this recipe a try! Yum!

Parmesan Spinach Rice

Ingredients

  • 1 T butter
  • 2 T minced garlic
  • 1-2 t garlic salt
  • 3 cups Spinach
  • 2 Cups uncooked rice
  • 4 Cups water or chicken stock
  • 1/4 cup Parmesan cheese

Instructions

  1. In a large soup pot melt butter, garlic and salt over medium heat.Put in spinach. Stir around until spinach has withered down.
  2. Add in rice and increase heat to high. Stir around rice for 2 minutes. Add 4 cups of water or stock and add cheese.Bring to a boil, cover and them let simmer for 20 minutes. Remove from heat and let stand for 5 minutes.
  3. Enjoy!

  1. This sounds very good, and easy. I would try it with vegetable stock if I didn’t use water. I wondered if you use finely grated parmesan (like that in the can) or shredded parmesan?
