Queen Mum here – I really like egg sandwiches. What I didn't like was trying to gauge whether the skillet was hot enough to prevent the egg whites from running all over the place. I bought these silicone egg molds and I love 'em!
They are so easy to use. You just put them in the skillet after spraying a little spray or whatever you use, and then pop in the egg. When the egg is ready to turn you just remove the mold using the handle and use your spatula. If you like your eggs sunny side up just remove the mold when you're ready and serve.
Depending on the size of the skillet, you can cook up to 4 eggs at a time. They can also be used to make mini pancakes.
