Cold days are upon on us and nothing came warm your soul as much as a hearty cup of chili! My husband loves chili, but unfortunately I'm not a huge fan. I've tried to like it but it just doesn't tickle my taste buds. But marriage is all about compromise! I found that I love white chicken chili and this recipe really hits the spot!

This Creamy White Chicken Chili is a simple meal to make but it's delicious! I love how the flavors all merge together. I'm a huge fan of a thicker soup or chili like this recipe. It just feels to comforting! I enjoyed this chili paired with a big warm slice of corn bread.

Creamy White Chicken Chili

Creamy White Chicken Chili

Ingredients

  • 2-3 boneless skinless chicken breasts
  • 1 1/2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 14.5 ounce can chicken broth
  • 4.5 ounce can chopped green chiles
  • 15 ounce can white corn, drained
  • 2 15.5 ounce cans white beans, drained
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 cup milk
  • 1/4 teaspoon white pepper
  • 1/2 teaspoon seasoned salt
  • 1/2 cup sour cream

Instructions

  1. Place chicken breasts on the bottom of a slowcooker, and add chili powder, cumin, onion powder, garlic powder, chicken broth, green chiles, corn and beans. Cook on low for 6-8 hours.
  2. About an hour before serving: In a small saucepan, melt butter over medium high heat. Whisk in flour, and allow to bubble and brown a bit. After 2 minutes, gradually whisk in the milk.
  3. Allow the sauce to simmer for 4-5 minutes, whisking frequently until it is slightly thickened. Add salt and pepper.
  4. Pour sauce into slowcooker and mix to combine.
  5. Add sour cream and mix.
  6. Remove chicken and shred. Return to slowcooker.
  7. Let the chicken chili cook on low 1 more hour. Enjoy!
