Mixed Steak and Chicken Fajitas

When I graduated from college my parents took my husband and I on a trip to Mexico. We went to Puerto Vallarta. It was the first time that I had really traveled as an adult. I loved it! Unfortunately there was a minor hurricane but that's another story! As we were wondering around the local town we stopped in this little hole-in-the-wall restaurant and it is there that I had the best fajitas ever. Seriously life changing! Since then the quest has gone on to find some that compare. These Mixed Steak and Chicken Fajitas are pretty dang close!
Whenever we go out to eat Mexican I can also count on my husband to order Fajitas. It is his absolute favorite. But why go out when they are so easy to prepare at home. The hardest part is slicing up the peppers. That's when I call in some help from the hubby!
I love the combination of steak and chicken. Then you can have just a steak fajita or chicken…or mix them up! After you have constructed your fajita do not to squeeze some fresh lime juice over top. Just a light squeeze will really make all the flavors pop!

Mixed Steak and Chicken Fajitas
Mix chicken and steak with veggies for loads of flavor
Ingredients
- 1 lb chicken breasts, skinless, sliced thinly
- 1 lb top sirlon, sliced thinly
- 1 medium Spanish onion, peeled and sliced thinly
- 1 large green bell pepper, cleaned and thinly sliced
- 1 large red bell pepper and yellow pepper, cleaned and thinly sliced
- 1 lime, juiced
- 2 serrano chiles. cleaned and finely diced
- 1 package Fajita seasoning
- 3 tablespoon olive oil
- Salt & pepper, to taste
- 1 package flour tortillas
- Grated cheese
- Sour cream
- Salsa
Instructions
- Spoon olive oil to a cast iron skillet heating on medium.
- Add the chicken and steak to the heated skillet.
- Sprinkle the salt and pepper to season the meat.
- Sautee the meat until lightly browned.
- Add in both peppers and onion cooking until slightly soft.
- Stir in the fajita seasoning. Mix well.
- Combine the diced serrano's and lime juice.
- Add the serrano and lime juice mixture to the fajita mixture.
- Continue to sautee until the chicken is thoroughly cooked.
- Heat flour tortilla in the microwave.
- Serve with sour cream, cheese and fresh salsa.
