Back to school time is here. I forgot how hectic everything gets around my house. I now have  2 children in school and 1 at home with me. We are all getting back in to the routine of early mornings and busy evenings. All of the kids are starting Fall sports…just call me soccer mom! So with everything going on I needed some ideas for some quick and easy meals.

So I made a list and headed to Walmart. If I don't have a list, I forget everything! Of course I always end up with more then when I actually had on the list. I grabbed some more Nestle Coffee-Mate because I love it in my hot chocolate and it's fun to sneak into recipes for added flavor. I also made sure to put up some Carnation Breakfast Essentials, this stuff is great for those mornings when you hit the snooze button a few too many times! You can see my whole shopping trip here.

I want to make sure that my kiddos get a good breakfast before they head to school, but I'm not exactly a morning person either so making a huge breakfast before the bus comes just isn't going to happen. I need some #BTSideas! So over the weekend I made enough pancakes to freeze for the rest of the week.

Freezing pancakes is very easy. Cook pancakes as you normally would do. After they have cooled off put a layer of pancakes inside a gallon size freezer bag (Make sure the bag is laying down flat), then lay a sheet of wax paper on top of them. Add another layer of pancakes and then wax paper. I usually do about 3-4 layers in each bag. This way in the morning I can easily remove the pancakes and pop them in the microwave for a quick breakfast.

For the first week of school I wanted to make breakfast a little extra special so I made Vanilla Caramel Pancakes with Chocolate Maple Syrup! I know it sounds really fancy but it's actually very easy to make. I used ingredients that I got during my shopping trip. I flavored a simple pancake mix with the Coffee-Mate and used the Carnation Breakfast Essentials in the maple syrup to make it Ah-Mazing!

Vanilla Caramel Pancakes

Ingredients

  • 2 Cups Pancake Mix
  • 1 Cup Nestle Coffee-Mate, Vanilla Caramel flavor
  • 1/2 Cup Water

Instructions

  1. Preheat Griddle to 350 degrees.
  2. Combine mix, Coffee-Mate, and water in a bowl and whisk until large lumps disappear. Over mixing can cause tough pancakes.
  3. Pour 1/4 cup of batter onto the hot greased griddle. Flip when pancakes bubble.
  4. Makes 12-14 Pancakes.
  5. Enjoy!

  1. Totally love the idea of mixing in the Nestle products to make other convenience products a little bit more special–and I’d never even thought about making and freezing pancakes–great idea! Like them getting a great, warm, home made meal in the morning with a fraction of the fuss! (I’m not a morning person either!!)
