Creamy Rice Pudding
When I'm making a dinner that calls for rice I always try to make extra just so I can make rice pudding. This is my favorite recipe, it turns out so creamy. Is it dessert, is it breakfast?! We eat it for both. But one thing that's for sure…it doesn't last long before it's gobbled up!

Rice Pudding
Ingredients
- 1 1/2 cup cooked white rice
- 2 cups milk, divided
- 1/3 cup white sugar
- 1/4 cup brown sugar
- 1/4 teaspoon salt
- 1 egg, beaten
- 1 tablespoon butter
- 1/2 teaspoon vanilla extract
- 1/2 cup raisins (optional)
- 1-2 teaspoons cinnamon (optional)
Instructions
- In a saucepan, combine cooked rice, 1 1/2 cups milk, white sugar, brown sugar and salt. Cook over medium heat until thick and creamy, 15 to 20 minutes. Stir in remaining 1/2 cup milk, beaten egg, and raisins and/or cinnamon if wanted.
- Cook for 2 additional minutes more, stirring constantly.
- Remove from heat and stir in the butter and vanilla.
