Keto Taco Zucchini Boats {Low Carb/Keto Friendly}

This recipe uses a lot of zucchini, which is just coming into season right now. If you don't have this in your garden, we can get great prices on zucchini at the grocery store!

 

The rest of this budget friendly meal you may even have at home already! Just an onion, cheddar cheese, (tomato sauce and diced tomatoes if you want more robust flavor ), ground beef, and some taco seasoning.

If you don't make your own taco seasoning like I do, then just use your favorite brand..  Since we try to stick to organic foods and are now on the Keto diet, I try to make my own seasonings ahead of time.

Keto Taco Zucchini Boats Ingredients

First, just hollow out your washed zucchini with a spoon and pre-heat the oven to 400.  You can discard the centers of the zucchini.  Line up on a baking sheet and sprinkle salt and pepper (to your taste). Then, drizzle a bit of extra virgin olive oil over and coat evenly – I just use my hand and coat them to make sure they have a nice thin coating of oil.

Bake your zucchini boats in oven for 10 mins.  While the zucchini is in the oven, heat up 1 tbsp of olive oil and saute the chopped onions.  Add ground beef and cook until browned, drain.

Mix other ingredients in sauce pan and add to your now ready empty zucchini boats. I used diced tomatoes for the photos to add some color but honestly we don't eat tomatoes on ours so I left it out of the recipe to be more carb friendly.

Keto Taco Zucchini Boats Filled

Now is the fun part! Just add whatever other toppings you desire.  We love the cheddar cheese to give it a real taco flavor.  You can also serve these as a main dish or appetizer.  I personally think they are filling with all of the meat and veggies.

If you're following the Keto diet, be sure all toppings added are on your eating plan!  You can spice it up with some hot jalepenos or just top with sour cream or avocado.  For nutrition purposes, all the nutrition information on this recipe is calculated without any additional toppings– it really doesn't need anything extra!

Taco Zucchini Boats {Keto-Friendly}

Ingredients

  • 2 zucchini
  • 1 lb ground beef
  • 2 tbsp olive oil, extra virgin
  • 1/4 onion, chopped
  • 1 cup cheese, Mexican blend, shredded
  • 1/2 tsp chili powder
  • 1/2 tsp onion powder
  • 1/4 tsp oregano
  • 1 tsp cumin
  • 1/4 tsp garlic powder
  • 1/2 tsp paprika

Instructions

  1. Preheat oven to 400 degrees.
  2. Cut the end of the zucchini and cut in half.
  3. Using a spoon, scoop out the insides if the zucchini and place on a baking sheet.
  4. Sprinkle salt and pepper (to your taste) and drizzle a bit of extra virgin olive oil.
  5. Bake in oven for 10 mins.
  6. While the zucchini is in the oven, heat up 1 tbsp of olive oil and add the chopped onions.
  7. Once onions have cooked through, add ground beef and cook until browned.
  8. Add can of fire-roasted tomatoes, 2 tbsp of tomato sauce, and taco seasoning.
  9. Scoop mixture evenly  into each zucchini boat.
  10. 10. Bake in oven for 15-20 minutes.
  11. 11. Remove from the oven and sprinkle cheese mixture over the zucchini.
  12. 12. Put back in oven up to 5 mins and remove.
