This Easy Salsa Chicken Casserole has quickly become a family favorite! Taco Tuesday is my children's favorite meal, but after a few weeks in a row I start to get a little bored. This casserole is a great alternative. It has the taco taste but its even easier to make!
I love this casserole because it's so easy to make. The list of ingredients it's so short! I normally have most of them in my pantry. I also love that everything just goes straight into the casserole dish! I love cooking, but I hate cleaning! So the less dishes the better!
This casserole packs tons of flavor! Make sure you use your favorite salsa. I enjoyed scooping the rice mixture onto chips and eating it that way. I put a dab of sour cream of the chicken and it tasted perfect!

Easy Salsa Chicken Casserole
Ingredients
1 cup uncooked rice
1 cup frozen corn kernels (thawed) or 1 can
1 (15 oz.) can black beans
1 (16 oz.) jar salsa
1 cup chicken broth
1/2 packet taco seasoning
2 chicken breasts
1 cup shredded cheddar cheese
Instructions
Preheat the oven to 375 degrees. Rinse the black beans. Add the dry rice, black beans, corn, salsa, chicken broth, and taco seasoning to a casserole dish. Stir until everything is evenly combined.
Cut the chicken breasts in 3 pieces. Add the chicken to the mixture in the casserole dish. Cover the casserole dish tightly with foil. Bake for about an hour.
Check the dish after about an hour and see if the rice is thoroughly cooked. If not, return to oven until done. Sprinkle with cheese and put it back into oven just until it's melted. Serve with sour cream, green onions or chips! Enjoy!
