Year after year everyone has their favorite dishes that get requested, but the one thing that no one asks for is the appetizers and relish tray. They don’t ask because it would be a sin to skip them! There will always be little hands (and probably not so little hands too) wearing olives on every finger! And we all pretend we mind even though we don’t as long as they don’t go back on the tray that is! Someone always says, “You’re still making your sweet potatoes aren’t you?” “Of course I am!” Because no holiday gathering is complete without candied yams. Although, come to think on it, I don’t know what the difference between a yam and a sweet potato is. Maybe it’s just where you’re from. Hmm? One day when I have extra time, I’ll look that up.
Sweet potatoes are one of the most kid friendly dishes out there. They’re sweet and happen to be packed with a bunch of wholesome goodness too. I always love encouraging good habits. There are marshmallows here, but after all, it is the holidays! This is a quick and easy recipe that takes only a few ingredients that I usually keep on hand anyways, so no muss no fuss is always a plus.

- 3 large Sweet Potatoes peeled and cut into thick slices
- 2 Tbsp. melted Butter
- Maple Syrup
- Pecan halves
- Preheat oven to 400.
- Toss the sliced sweet potatoes with the melted butter and a little bit of maple syrup. Place in a single layer on a rimmed baking sheet. Sprinkle with salt and bake for about 20 minutes or until tender. Flip the potatoes halfway through baking.
- Once baked, turn on the broiler and top each sweet potato coin with a marshmallow. Place under the broiler and broil until the marshmallows are soft and golden brown. Immediately top with a pecan half and serve.
