Puff Pastry Breakfast Bites

Breakfast is one of the most important meals of the day but it's not always the easiest to do. It always seems like my family is in a hurry and honestly I am tired of handing my teens a poptart in the morning. I want them to have something that is still quick and easy but get give them some substance. That's when I came up with these Homestyle Breakfast Bites. You can make them ahead and then freeze them. All my kids have to do is pull them out and heat in the microwave.

Here is a photo of what they should look like in the pan before I put them in the oven and added cheese.

Homestyle Breakfast Bites

Ingredients

  • 6 eggs
  • 1 teaspoon of seasoning salt
  • 1 teaspoon of garlic powder
  • 1 red pepper
  • 1 green pepper
  • 1 onion
  • 1 - 2 potatoes (depending on how much you want to use and size)
  • 1 pkg of breakfast sausage
  • 1 pkg of Pepperidge Farms Puff Pastry Sheets
  • shredded cheese
  • olive oil or vegetable oil
  • salt & pepper to taste
  • nonstick minni muffin pan or brownie pan

Instructions

  1. Heat the oven to 400°F. Sprinkle the flour on the work surface. Unfold the pastry sheet on the work surface. Roll the pastry sheet into a 10x15-inch rectangle. Cut the pastry sheet into 24 (2 1/2-inch) squares. Press the pastry squares into 24 (1 3/4-inch) non stick mini muffin-pan cups, making sure the sides are up all the way around. ( I made my sqaures just a little bit bigger and used a brownie pan)
  2. Dice up your potatoes, peppers and onion and cook in a skillet with a little bit of oil.
  3. Whisk 6 eggs in a bowl with garlic powder and seasoning salt. Also add salt and pepper to taste.
  4. Add 2 spoonfuls of your potato, onion, pepper mixture to each sheet in your tin.
  5. Add 1 tablespoon of egg mixture in your cups. ( I added 2 tablespoons using the brownie pan)
  6. Bake for 10 minutes
  7. Add shredded cheese to the top of each cup and bake 5 more minutes.
  8. Let cool for 2 minutes. Mine popped right out of the pan.
  9. Freeze and reheat when ready. I microwaved 2 of them together for 1minute 10 secs.
