Chocolate Cupcakes

Chocolate CupCakes
Ingredients
- 1 cup sugar
- 1 cup brown sugar
- 1 3/4 cup all-purpose flour
- 1/2 cup cocoa powder
- 1 1/2 tsp baking soda
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 2 eggs
- 1 cup milk
- 1/2 cup vegetable oil
- 2 tsp vanilla
- 1 cup HOT water
Instructions
- Preheat oven to 350 degrees and fill muffin pans with 24 cupcake liners.
- Sift dry ingredients into a mixing bowl.
- Add eggs, milk, oil and vanilla. Beat with a mixer for about two minutes, occasionally scraping the sides of the bowl with a rubber spatula. Add the boiling water, and beat, just until blended.Batter will be thin.
- Fill liners about 2/3 full. Bake for 20 minutes, until the center of the cupcakes spring back when lightly touched. Cool and frost.
