Tuna Stuffed Avocado

If you are a Consumer Queen fan you may have noticed I recently started on the Keto diet! I am excited to share new recipes, especially ones with lots of layers of flavor! Clean eating doesn't have to be boring.
This recipe has some great summer flavors and uses ingredients that we can get easily this time of year. If you're doing Keto you probably have been buying avocados a lot at the grocer, so this is a recipe using items you probably already have in the kitchen. (One of my favorite kinds of recipes!) If you need to find the spices online, you can get the Paprika, Chives, and Cheyenne from Amazon. This recipe comes together quickly and would make an easy lunch or light main dish for dinner.

Tuna Stuffed Avocado
Ingredients
- 2 Avocados
- 1 can Tuna
- 1/4 cup Mayo
- 1/4 tsp Paprika
- 1 tbsp Chives
- 1/4 tsp cayenne pepper
- 1/2 cup cheddar cheese
Instructions
- Preheat oven to 350
- Cut avocado in 1/2 and take out the pit
- In a bowl mix Tuna, Mayo, and Cayenne Pepper.
- Put mixture in the Avocados.
- Bake in the oven at 300 for 5 mins
- Add cheese on top then broil till cheese is melted.
- Garnish with chives and Paprika
