Here’s one of my easy go-to dinner ideas!
I'm sure we all have a list of “go-to” dinner recipes. This is one of my favorites. I love it because you can throw in what ever vegetables you have in your fridge.
First cook your pasta according to the directions. Then put it in a pan with some olive oil. Mix in what ever veggies you want. I normally use broccoli, corn, peppers, spinach…what ever you like. Then add some pesto sauce. I always have a jar in my fridge or you can make some fresh! I don't use a whole bunch, probably about 2 tablespoons. Mix it all up and then sprinkle with Parmesan Cheese.
I'm not going to give measurements because this is one of those meals that you just throw in what you have. I'm just sharing what I make and hopefully it will inspire you!

Homemade Pesto Sauce
Ingredients
- 1 cup tightly packed fresh basil
- 1 cup tightly packed fresh parsley leaves
- 1 to 2 garlic cloves
- 1/2 cup olive oil
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon salt
Instructions
- In a food processor puree all ingredients until well blended.
- Makes about 3/4 cup
