Peach Pecan Bread Pudding
This recipe come from our reader Jinni ( She's also a fellow blogger at ConsumerQueen.com!) I think it looks delish and can't wait to give it a try! Here's the story behind how she came up with the recipe!
“Many years ago, I spent three weeks in New Orleans training a manager. I usually would order room service and ordered this on my first night. It was bread pudding with peaches. OMG, I was hooked. I ordered it every night until they ran out. The room service guy said the cook was a Cajun and made this every once in a while. I experimented, until I got it right. Hers did not have pecans in it…but I like them in it. I have always called it Cajun Bread Pudding!”
Peach Pecan Bread Pudding
Ingredients
- 2 c Sugar
- 2c Milk
- 1Tsp Vanilla
- 6 eggs
- 4 cups of bread cubes
- 1 can of peaches
- 1/2 c pecan pieces
- 1/2 c Brown Sugar
Instructions
- Blend eggs, milk sugar and vanilla in a bowl
- Cut bread into cubes and place in dish.
- Drain Peaches and scatter in the bread cubes. Sprinkle Pecans over the bread cubes.
- Pour the egg mixture over the bread.
- Sprinkle brown sugar over the top and bake at 350 for 50-60 minutes.

I made this recipe for my family and it was absolutely delicious. I did use two bags of frozen peaches drained well. I also toasted the peacans prior to using .
