Whether you have a spring or summer garden, or have some fall and winter squash, we have some great recipes that will put that fresh produce to good use!
Using Produce from the Garden
We have a garden fairly early in the year, with our fresh strawberries and herbs. Then we have a summer harvest of tomatoes, zucchini, squash and peppers. Sometimes we also have some late year squash, which freezes great and can add so much flavor –and healthy vitamins and minerals– to main dishes!
You might have a great crop from your garden, but end up giving a way a lot of fresh produce just because it’s always a little difficult to find recipes that call for that many fresh ingredients! No need to look further, just scroll down for some great ideas for appetizers, dips, and even main dishes that use fresh ingredients.
Fresh Garden Recipes

Black Bean Salsa– this one is one of those recipes all of our friends and family know we will bring to a potluck, so they request it often. It goes with just about anything but it’s such a great side for taco night!
Slow Cooker Vegetable Soup– Fresh veggies add so much flavor to this recipe, and you can really use up a lot of produce if you have a great crop of fresh garden tomatoes.
Jalapeno Corn Dip– This recipe uses Jalapeno Peppers, and fresh cilantro. Add some canned corn, bacon, and cheese and you have an irresistible appetizer.
Instant Pot Stuffed Pepper Soup– We love Stuffed Peppers for their flavor and how they are so hearty. However, we know some of you aren’t fans of that roasted bell pepper the stuffing is traditionally served in. Especially smaller kids! So this soup recipe takes all those flavors wrapped into a family-friendly soup version. So good!
Homemade Tomatillo Sauce Recipe– The fresh tomatillos take this Sala Verde recipe to the next level. If you have these fresh from the garden, it’s a must try.
Homemade Dill Pickle Seasoning– We used fresh dill in this recipe and use it to flavor popcorn, dips and more!
Lemon Pasta Salad– Cherry tomatoes and fresh basil add so much flavor to this pasta salad. Great for those summer cookouts or potlucks! You can also add peas and any other fresh veggies you prefer.
Cowboy Caviar – Use your fresh onions, tomatoes and cilantro in this delicious dip.
Tomato Basil Soup– This soup isn’t just for fall and winter! Add a grilled cheese sandwich and it’s perfect any time of year on a rainy day. I love the Fresh Basil flavors.
Dill Pickle Dip– Along with our Dill Pickle Spice, this is one of our recent favorites! We have fresh dill in our garden we dehydrate and add to our Dill Pickle Spice (above).
Homemade Guacamole – This is a great way to use fresh tomatoes. I love them in this easy Homemade Guacamole.
Slow Cooker Restaurant Style Salsa – Need to use a LOT of tomatoes? Add them to this recipe along with fresh peppers and cilantro.
Spinach and Artichoke Dip – If you have fresh spinach, substitute the canned for fresh for this amazing dip.
Blueberry Honey Butter – Blueberries can be abundant in the late spring and summer. Add them to butter for this topping for biscuits, scones and more.
Instant Pot Strawberry Jelly – Do you have spring strawberries? Cook up some homemade Strawberry Jelly in the Instant Pot!
Low Carb Spicy Zucchini Chips – Zucchini is abundant in Oklahoma, and so easy to add to the garden. We love these Zucchini Chips!
Keto Taco Zucchini Boats – for a main dish idea, add toppings and roast full zucchini for these low carb Taco Boats!
Chicken Sausage Zucchini Skillet – You can use up a lot of squash, zucchini and any tomatoes you have with this skillet meal.
Cast Iron Skillet Harvest Squash – Fall and winter squash veggies are such a great base to a casserole. I love this Harvest Squash Casserole for later in the year.
Crock Pot Spaghetti Squash with Meatballs – If you haven’t tried Spaghetti Squash, it’s so good and not as heavy as regular pasta. Try it out in the Crock Pot with marinara sauce and meatballs!
