I love crockpot cooking. If I can get dinner prepare while the kids are napping it just makes my day go by so much smoother! I also love meals that you cook once and can eat off of twice! Here is a great tip to make rotisserie style chicken in your crockpot. Put foil balls in the bottom. This will keep the chicken from sitting in the juices. I did this last night for dinner and it turned out perfect! I rolled up 4 foil balls and place them in the bottom. I removed the chicken guts (yuck!!), washed it out, rubbed it with olive oil and placed it in on top of the foil balls. I used a lemon pepper seasoning mix and sprinkled that on the bird. I had some fresh rosemary so I stuck that in too! I cooked it on high for about 6 hours and voila! It smelled wonderful and tasted great! Now I have enough shredded chicken for a few meals.

  1. If you don’t want to use foil, you can just turn a small saucer upside down and put the chicken on top.

  2. Just to verify, no liquid, just the chicken and spices? So the chicken provides enough of it’s own juices I guess, Thanks, we will have to try this.

  3. I was wondering if you can stuff the chicken as well? This sounds so delicious and I love to make my own stuffing when we have a roasted chicken or turkey.

  4. In all honestly I kick myself in the butt!! I started doing Crockpot meals about a year ago. I wasted so many hrs over the years not knowing how to cook in one. My mom wasnt much a crock pot cooker. Everyday after school it was ready when we got home. However times have changed alot with having two incomes to support a family. So our afternoons went from being so dang crazy with homework, reading, sports, dinner to a smooth sailing afternoon. 3 days a week I cook two meals at once because I have the 3 pot cooker. Then one day a week we either to do a easy sandwich and soup night or left overs. I swear by Crockpots these days. The kids also love the creations. It turns a plan jane meal in to really just about anything.
