Low Carb Sugar Free Cinnamon Pecans
Looking for a great treat for fall? Try my Low Carb Sugar Free Cinnamon Pecans! The State Fair is starting up right now here in Oklahoma, and one thing I love is that scent of those cinnamon pecans! But since I am doing a Keto diet now, I thought a sugar free option would hit the spot. See my recipe below!
These Sugar Free Cinnamon Pecans are actually super quick and easy. They require just 1 pan, and no oven time! That’s my kind of dessert. This recipe makes 1 small batch, but if you have company or want to make enough to last for the week you can easily double the recipe up.
The butter, cinnamon and Swerve give these pecans a delicious coating. I love the way some have a bunch and some have just a hint of the flavor. You really get a sweet/salty snack when you just roughly break up the cooled off pecans into a bowl.
Cooking with Swerve
To make these, just get out your favorite non-stick skillet and heat up your butter and Swerve. If you haven’t heard of Swerve, it’s my favorite way to bake sugar free treats now! A little goes a long way. You can find confectioners, brown and granulated Swerve on Amazon. Add pecans to your mixture.
Be sure and stir your pecans often while they heat up. It’s not something you want to leave on the stove while you’re doing something else around the kitchen- these will scorch! So stay right with them and toss the mixture around until pecans have a mostly even coating. A non-stick pan is essential here for me.
Look at all that fall deliciousness! Be sure to store in an airtight container. You can also give these at Christmas (I have in the past) in a gift-able Mason jar, or decorative tin from the dollar store. I always line my tins with parchment or colorful Saran Wrap. Get creative! Enjoy the flavors of this fall confection without all the sugar! The cinnamon and Swerve gives an amazing candied coating to these pecans.
- Melt butter in nonstick pan over medium heat
- Add Swerve and Cinnamon and stir until sweetener is incorporated
- Add Pecans, stir well until all are coated with butter mixture
- Reduce heat to low and continue to cook for 5 minutes, stirring often.
- Remove from heat promptly to ensure the sugar coating does not scorch
- Transfer onto cookie sheet or parchment paper to let cool fully.
- Break up pecans with a spoon and serve, or store in an air tight container.
