As I’ve said before…pancakes are one of my children’s favorite foods. They love them! I often make a large batch and freeze them so that I have some ready to go whenever they want them.
I found a new way to prepare pancakes…and it’s so easy and fun!
Prepare the pancake batter as directed. Spray a muffin pan or a mini muffin pan. Pour the batter into the muffin pan and fill it up until it’s about 3/4 full. Top it off with your favorites like chocolate chips, nuts, berries etc! Bake at 350 degrees for 8-10 minutes for the mini and 12-14 for full sized. That’s it!
Now you can make pop-able pancake muffins! The kids will love them and they are great for a quick breakfast on the run!
