This recipe only takes 5 ingredients, most of which you probably already have in the pantry this time of year. My favorite part of this particular recipe is the crunch from the Rice Krispies! It also cuts down on the richness of the peanut butter, so you can enjoy more than one!
Melting Almond Bark can be tricky if you haven't done it before. Just melting on the stove top in a double boiler is how these are traditionally made, but you can also use a Pyrex glass bowl and just microwave it if you're more comfortable with it. - 4 cups Powdered sugar, lightly packed
- 18 oz Creamy Peanut butter, see note
- 3 cups Rice Krispies
- 1/2 cup Margarine, 1 stick
- 1 pkg Good quality Chocolate Almond Bark
Prepare a cookie tray with parchment or a silicone liner. You can also use a casserole dish. This will just be used for allowing peanut butter balls to sit and chocolate coating to harden.
In a large bowl, combine creamy peanut butter, powdered sugar and Rice Krispies. Mix ingredients together with hands & roll into balls. Dough will be thick. You can also use a wooden spatula but as dough thickens it's easier to work with your hands.
Scoop peanut butter ball dough out of the bowl with a 1/2" or medium cookie scoop and roll by hand into 2" balls. Set on prepared cookie tray or in a 9x13 dish.
Meanwhile, Melt 1 pkg Chocolate Almond Bark according to package directions. We melt it in a small sauce pan on the stove to keep the almond bark in a liquid consistency, with no reheating required.
Dip balls into bark with 1-2 forks. Each peanut butter ball should have a light but complete coating of chocolate. Let cool on prepared cookie tray.
Refrigeration is not required but for storage, store in a refrigerator until ready to serve. Best served cool or chilled.
Do not use any "natural" peanut butters for this recipe. Natural peanut butters mix be mixed prior to serving, and have oils that separate. For this recipe, choose a peanut butter that does not require mixing. Jif, Great Value Creamy Peanut Butter, or Aldi brands should work fine.
Allergen note: For a peanut-free version, we have tried Wow Butter brand sunflower butter. The taste is slightly different but the consistency is very similar and the peanut butter balls set up wonderfully. We recommend a test-run with a half recipe to see if you like the peanut-free version.
