Chicken Tenders are one of my favorite meals to throw together. You can enjoy these with just about any flavoring. See this easy recipe for Chipotle Lime Crusted Chicken Tenders!

Chipotle Lime Chicken Tenders

Chicken Tenders Recipe:

There are countless recipes for chicken tenders. I often just throw a recipe together depending on what sides I have, and what I have time to make! If I have thawed out chicken in the fridge- ready to go- that’s half the battle when it comes to figuring out what to make for a lunch or dinner.

If you have smaller kids, Chicken Tenders are probably on a frequent rotation on your menu at home. I know they were when my kids were smaller. There’s just something so good about crispy chicken! It’s so kid friendly and it goes with just about anything you have on hand. Even if it’s just apple slices and a bag of chips!

Limes

Zesty Southwest Flavors:

I got the idea for this Chipotle Lime Crusted Chicken Tenders meal just because I was craving fajitas. It’s not really what I would normally go to for cooking chicken tenders but it totally works! Put this together with just a few ingredients:

  • Real Mayonnaise
  • Monterey Jack Cheese
  • Lime juice
  • Chipotle Chile pepper, ground
  • 4 boneless, skinless chicken breast halves, cut into strips
  • Plain tortilla chips

I use a food processor to crush my tortilla chips to a uniform size and crumb. This helps coat them evenly when you’re dipping the chicken tenders, and it also prevents you from having larger bites of tortilla chips in your chicken.

Tortilla Chips

After your chicken is ready to bake, just lay them out evenly on a wire baking rack. I put mine over a large baking sheet just so any juices and crumbs won’t land in the bottom of my oven! Flip half way through to let both sides crisp up. If you want to serve this one with dipping sauce, see a few tasty options linked below!

If you’re just making this for a quick weeknight meal, keep in mind you don’t need fresh limes or anything fancy. You can totally use lime juice in a bottle, and just the ground chipotle peppers in the spice aisle. No need to get carried away. Fresh limes work well too if that’s what you prefer.

Chipotle Lime Chicken Tenders

These chicken tenders make a zesty lunch or dinner option. They are fun to dip in a salsa or dipping sauce, and totally kid-friendly!

Prep Time 10 minutes
Cook Time 20 minutes
Additional Time 30 minutes
Total Time 1 hour

Ingredients

  • 2/3 cups of Hellmann's or Best Foods real mayo
  • 1/3 cup finely shredded Monterey jack cheese
  • 1 tbsp. lime juice
  • 1/4 tsp. ground chipotle chile pepper
  • 4 boneless, skinless chicken breast halves, cut into strips
  • 1/2 -1 cup crushed plain tortilla chips

Instructions

Preheat oven 425 degrees

Combine Hellmann's or Best Foods real mayo, cheese, lime juice and ground chipotle in a medium bowl.

Dip chicken in mayo mix making sure the strips are evenly covered.

Roll in tortilla chips, pressing the chips into chicken.

Spray baking sheet with olive oil and arrange chicken on sheet. If you have a wire rack, spray with cooking spray and set over a baking sheet.

Lay coated chicken tenders out neatly to get as many on the wire rack as possible.

Cook about 15-20 mins or until chicken is done and crispy. Flip over with tongs half way through cooking time.

Notes

Alternate cooking method: In an air fryer, cook at 400 for 8-10 minutes, flipping over chicken tenders half way through cooking time.

Cook until chicken is no longer pink and juices run clear. If tenders are larger, you can use a meat thermometer to ensure internal meat temperature is 165.
