Both terms are often used interchangeably to refer to a green sauce made primarily from tomatillos. “Salsa verde” translates to “green sauce” in Spanish, and it typically denotes a sauce that includes tomatillos as the main ingredient along with other ingredients like chili peppers, onions, garlic, cilantro, lime juice, and seasonings.

How Do You Get the Bitterness Out of Tomatillo Sauce?
If your tomatillo sauce tastes bitter, there are a few methods you can try to mitigate the bitterness:
- Choose Ripe Tomatillos: Sometimes, overly ripe or underripe tomatillos can contribute to bitterness. Aim for tomatillos that are firm, bright green, and have filled-out husks. Avoid tomatillos that are overly yellow or have dark spots.
- Remove Husks and Rinse Well: Peel off the husks and rinse the tomatillos thoroughly under running water. This can help remove any residual bitterness or stickiness on the skin.
- Roasting or Boiling: Cooking tomatillos can mellow their flavor and reduce bitterness. Roasting them in the oven or on a stovetop can add a smoky depth of flavor. Boiling them until soft is another common method. Experiment with both to see which method works best for you.
- Balance with Sweetness and Acidity: If the sauce is still bitter after cooking, you can balance it by adding a bit of sweetness and acidity. Consider adding a small amount of sugar or honey to counter the bitterness. Additionally, a splash of citrus juice, such as lime or lemon, can help balance flavors.

Homemade Tomatillo Sauce Recipe {Salsa Verde)
My husband's Homemade Tomatillo Sauce Recipe has been in the family forever, and is one of those recipes where you ask yourself why would you ever buy store-bought sauce! We love serving it with homemade flautas.
It comes together easily and is perfect for your weekday taco night, a potluck or even an appetizer as we get closer to football season.
First, roast your tomatillos, jalapenos, onion and garlic cloves on a cookie sheet. The silicone liner is optional but I use this one. You will add your roasted ingredients and your cilantro to the food processor, so I think a rough chop to begin with helps the vegetables blend uniformly.
I use the Ninja Food Processor, and have absolutely loved it. The “bowl” of the food processor is nice and wide, so that limits messes. It also has a separate on/off switch and a lock-down bowl which must be engaged for the machine to come on. Both are nice safety features.
Do not over-blend your tomatillo sauce, since you want the final result to have somewhat of a chunky, home-style salsa texture. The heat you end up with in your green salsa depends upon how much jalapeno has been added. We do like our salsa fairly hot, since it calls for two jalapenos but if you are sensitive to spicy foods you can always adjust to your liking.
How Long Does Homemade Tomatillo Sauce Last in the Fridge?
Homemade tomatillo sauce can typically last in the refrigerator for about 1 to 2 weeks when stored properly. To maximize its shelf life:
- Cool Before Refrigerating: Allow the tomatillo sauce to cool completely at room temperature before transferring it to an airtight container or jar.
- Proper Storage: Store the sauce in a clean, airtight container or jar. Ensure that the container is sealed tightly to prevent air exposure, which can lead to quicker spoilage.
- Refrigeration: Place the tightly sealed container of tomatillo sauce in the refrigerator promptly after it has cooled down.
- Check for Signs of Spoilage: Before using the sauce, inspect it for any signs of mold, unusual odor, or changes in color or texture. If you notice any of these signs, discard the sauce.
Remember, the timeframe for freshness can vary depending on factors like the sauce's ingredients, how it was prepared, and the conditions in your fridge. If you're unsure about its freshness, it's always best to err on the side of caution and use your judgment based on its appearance and smell. If you don't plan to use the sauce within a week or two, consider freezing portions of it for longer storage. Frozen tomatillo sauce can last for several months.

Homemade Tomatillo Sauce Recipe
Ingredients
- 1 pound of tomatillos
- 1 medium size onion cut in quarters
- 2 jalapeños, seeded
- 1/2 cup cilantro
- 2-4 cloves garlic (we like more garlic)
- 1 lime, Juice of 1 lime
Instructions
- Cut tomatillos in half and put cut side down on foil lined cookie sheet. Add garlic cloves, onions, and jalapeños to cookie sheet.
- Place in oven under broiler for 7 minutes or until tomatillos skins turn start to turn black
- Add roasted tomatillos, onions, jalapeños and garlic in blender. Add the rest of the ingredients and blend until desired consistency. Add salt to taste.
Notes
NOTE: I did not add serving size because it depends on how much you use. It makes about 3 cups. So adjust your nutritional's accordingly.
I guesstimated 10 servings just so you could get an idea.
