Rice Krispie Roll:

Hands down these are my absolute favorite way to make Rice Krispies.  And I know quite a few other people who feel the same way!  It has become a tradition to whip up a Rice Krispie Roll whenever go on a trip with with my best friend and her family.  Whether it's church camp or family vacations we always bring these delicious Rice Krispies with us!

How to Make It:

The rice krispies themselves are a basic rice krispie recipe but have peanut butter in them.  That right there is delicious by themselves but it gets so much better!  The peanut butter rice krispies are topped with melted chocolate chips, butterscotch chips and more peanut butter.

Start with a parchment paper covered cookie sheet, and press down your rice krispy mixture as you normally would after mixing them up on the stove. You can also use a silicone liner, but if you opt for that be sure to spray it thoroughly with non-stick spray!

I even spray my parchment paper as you can see above. As if this mixture isn't sticky enough, the freezer can sometimes add to it!

Roll that baby up, stick it in the freezer for a bit to set then slice and devour.  I promise you will not be disappointed!

Slice and Serve:

After the Rice Krispy Roll is finished in the freezer, take a sharp knife and cut through cross-wise. You can make the slices as thick or thin as you prefer, but stick to about 1/2″ so they don't fall apart, and are easy to serve.

For a party or serving at home, you can line them up as pictured. The yummy chocolate layer shows from the side.

These travel well, and are a little more filling for a travel snack than regular rice krispie treats, so we pack them up for road trips! I love these collapsible travel food containers here.

These also travel well for kids' school snacks, so if you're looking for something extra special to add to the lunchbox, just pop in one or two slices for a fun dessert!

Since these contain peanut butter, be sure to check with school requirements if you're making them for a crowd.  You can alternately use Wow Butter or another non-nut butter, but your results will vary.

Rice Krispie Roll

This is a fun and creative spin on traditional Rice Krispie Treats!

Prep Time 15 minutes
Cook Time 5 minutes
Additional Time 30 minutes
Total Time 50 minutes

Ingredients

  • 1/2 stick of Butter
  • 1/4 c. Peanut Butter
  • 10 oz. bag of Marshmallows
  • 5-6 c. Rice Krispies cereal
  • 1 c. Chocolate Chips
  • 3/4 c. Butterscotch Chips
  • 1/4 c. Peanut Butter

Instructions

    Melt the butter, 1/4 c. peanut butter and marshmallows in a large bowl in the microwave for about 1 1/2 minutes.

    Once it's melted together add the cereal, 1 cup at a time, and mix well.

    Spray a large piece of wax paper with baking spray then turn out the rice krispie mix onto the wax paper and flatten out in a large rectangle.

    To keep hands from sticking to the cereal mix simply wet your hands with water as needed.

    Melt the chocolate chips, butterscotch chips and remaining peanut butter in the microwave for 1 - 1 1/2 minutes or until smooth.

    Spread the chocolate mixture over the flattened rice krispies.

    Roll up, the long way, peeling the wax paper back as you roll keeping it on the outside of the rice krispie log.

    It will be messy but that's okay!

    Wrap in the wax paper and freeze for 20-30 minutes to allow the chocolate mixture to set.

    Remove the roll from the freezer and cut into slices using a serrated knife. Enjoy!
