Easy Recipe for Lemon Pepper Chicken

My husband has always loved lemon pepper chicken so I wanted to try to make my own.  I'm so glad I did!  It was delicious and so easy, and I don't have to worry about keeping a certain lemon pepper dressing or sauce mix in the pantry in order to make it. This one is definitely one of those recipes you can throw together at the end of the week– before the next grocery store trip!

This recipe for lemon pepper chicken requires browning the chicken before cooking in the crock pot.  My crock pot allows me to brown meat in it before cooking so it's one less dish I have to wash. If you have a Ninja Foodi, Instant Pot, or another electric pressure cooker/slow cooker combo you can definitely make this a one pot meal.

If you are looking for a new crock pot I would highly recommend one that browns the meat.  Honestly, I used to avoid crock pot recipes that called for browning the meat before cooking because I didn't want to deal with the extra mess and dish to wash.  My pre-browning crock pot has given me so many more recipe options!

How to Make:

You will first coat the chicken in a mix of flour and pepper. I use a small prep bowl and then a larger plate or cutting board to line up the chicken so it's not piled up. The chicken pieces can become sticky in just a few minutes so I try to keep them separated. This large cutting board from Dexas is my favorite, since I can use it for prep and then also keeping my food set out waiting to go into the cooker.

After you have your chicken ready, coat your slow cooker or electric pressure cooker with nonstick spray and melt the butter. You will need to brown both sides of your chicken and then remove with a good pair of tongs prior to setting your slow cooker to finish up the recipe.

Why brown the chicken? I think it really seals in the juices and gives the chicken an overall better texture. I serve this with rice or pasta for the most part, and if the chicken is browned first it holds together better and has a nice fork-tender texture. It's not really a typical crock pot “shredded chicken” recipe!

After your chicken is browned, return to the pot and add your cooking liquid. This recipe doesn't take very long, so be sure to time it correctly to be ready when your sides are for dinner. It's going to be a hit with the family– it has tons of flavor!

Crock Pot Lemon Pepper Chicken

Try this easy main dish you can prepare in the slow cooker, Instant Pot or electric pressure cooker!

Ingredients

  • 4 boneless skinless chicken breasts divided in half
  • 1/4 cup flour
  • 1/2 teaspoons pepper
  • 1/4 cup butter
  • 1 package dry Italian seasoning mix
  • 1/2 cups fresh lemon juice
  • 1/2 cup chicken broth
  • Dash of pepper, for additional seasoning
  • 1 lemon, optional for garnish

Instructions

Rinse and trim the fat from the chicken and cut each breast in half.

Mix the flour and 1/2 teaspoon pepper together in a bowl then coat the chicken in the flour mix. Set aside.

Next, in your slow cooker with a sauté option, melt the butter. Alternately you can use a saucepan on medium heat

Once melted, lightly brown each side of the chicken, but do not cook through.

Place the chicken into the crockpot and sprinkle the Italian seasoning on top of the chicken.

Mix the lemon juice and chicken broth together and pour over the chicken and seasonings.

Cook on low for 3-4 hours.

Add sliced fresh lemon, lemon pepper, or additional freshly ground black pepper prior to serving.

Notes

If you choose to use an electric pressure cooker, sauté according to recipe directions and then continue to cook 15 minutes on HIGH pressure. Manually release pressure. Check to make sure chicken is fully cooked prior to serving.
