Easy 1, 2, 3, Roasted Potatoes
This Easy 1, 2, 3, Roasted Potatoes is perfect for a weeknight! So easy and tasty!
These are by far my favorite potatoes to make! Anyone can make them! They are perfect for a side dish, pot luck, picnic….you get the idea. 🙂
One of my favorite things about this Roasted Potatoes recipe is that it pairs well with so many main dishes. Whether you are taking it to a potluck or grilling outside on a weeknight, this is a very versatile side dish. We are having pretty rainy spring weather right now, so I have to keep in mind when I am meal planning to include dishes that will work indoors for cold rainy days, and work with some fun meals for the grill.
I normally use red potatoes for this recipe, but you can easily substitute Yukon Gold or whatever is on sale. Keep in mind if you change the variety of potatoes the texture or cooking time will vary. As you can see from the photo above, I cut them into small bite-sized pieces. You really want to make sure they are all uniform in size (for even cooking) but they don't have to be perfect. 🙂
Toss well with Olive Oil in a large glass bowl or casserole. If you're making this in a 9 x 13 casserole dish, keep it simple and just prepare the recipe right in the baking dish! Find Organic Olive Oil here.
You will need a packet of Ranch Seasoning. Ranch seasoning is one thing that we do go through a lot of, and sometimes I don't have coupons for those small packets at the grocery store. So I feel like it's better to buy in bulk. The bulk size isn't available in all stores but you can find it on Amazon here.

This one is such a great side dish and perfect if you have potatoes to use up in the pantry
Ingredients
- 2-3 lbs Red Potatoes
- 1 Packet of Ranch Seasoning, or Equivalent
- 4 Tablespoons Olive Oil
Instructions
- Wash and cut potatoes into bite size, uniform pieces
- Toss Potatoes in Olive Oil
- Coat well with Ranch Seasoning
- Bake Uncovered at 425 Degrees for 35-45 Minutes
