A Great Dinner Side

I decided to just try a few things on my own with my favorite Keto friendly ingredients, and came up with this Broccoli Bacon Cheese Muffins recipe.  These turned out great so I am excited to share!

Since these muffins are savory, I think they would go well with dinner as a side (think corn bread muffins).  If you do prefer savory muffins for breakfast, go for it! They would also be great served for a brunch or church potluck as a Keto friendly option.

My Broccoli Bacon Cheese Muffins {Low Carb/Keto Friendly) Recipe

I made these muffins traditional size, using a standard sized muffin tin and my fun Silicone Muffin Cups. I didn't happen to serve these in the cups but that's an option especially with kids.   In the past they have liked to pick out their own color muffin cup.

Just fill half way full and pop into the oven!

My favorite flavors here are the broccoli, cheese and of course bacon! And the best thing about these is that if you're doing a Keto diet, you should have all of the Keto specific ingredients already in the kitchen, as I did.  Almond and coconut flour are the main two “Keto” ingredients in these.   The other ingredients are things everyone probably has on hand.

With cheeses as usual, if you happen to have another variety like sharp cheddar or Monterrey jack on hand, you can still make this recipe.  It won't change your recipe entirely, just remember the flavors won't be exactly the same as in my recipe here. 🙂

Broccoli Bacon Cheese Muffins

Broccoli Bacon Cheese Muffins Tin side (1 of 1)

These Broccoli Bacon Cheese Muffins are perfect for a low carb lunch.

Prep Time 15 minutes
Cook Time 30 minutes
Total Time 45 minutes

Ingredients

  • 1 broccoli floret
  • 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1 tsp baking powder
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • pepper, to taste
  • 3 eggs
  • 2 tbsp butter, melted
  • 1 cup colby jack cheese, or your favorite
  • 3 bacon slices, cooked and crumbled

Instructions

  1. Preheat oven to 350
  2. Cook bacon and crumble
  3. Steam broccoli in a pot till tender. (I used stem ad all)
  4. Put all ingredients in a mixer and mix well.
  5. Use a medium size cookie scoop and scoop into a muffin tin with silicone muffin cups.  The silicone muffin cups will allow them to pop right out when finished.
  6. Cook for 30 minutes and let cool for a few minutes before pulling them out of the silicone cups. You should be able to just flip the cups over and they fall out.
