We asked for it and out fan Kendra delivered! Check out this great recipe that is one of her family's favorites. She named it, “Mambo Italiano” It takes some convenience products and combines  them to make a yummy homemade meal. I love the layer of eggplant mixed it!

Mambo Italiano

Ingredients

  • 1 eggplant peeled and sliced thin soak in cold salt water for five minutes
  • 1 bag Pre breaded chicken tenders ( I use banquet it's cheap and good)
  • Two jars of your favorite pasta sauce
  • Two to four cups of shredded mozzarella ( how cheesy do you like it)
  • 8oz shredded parmazan cheese fresh not dried
  • And one lb thin spaghetti noodles

Instructions

  1. I take the eggplant and put thin slices in a skillet with a little Pam spray flip cook about fifteen seconds each side lay in the bottom of your big baking dish that is your first layer
  2. Spread even layer of mozzarella
  3. Even layer of sauce
  4. Layer of chicken tenders
  5. Layer of mozzarella
  6. Layer of sauce
  7. Layer of chicken tenders
  8. Layer of sauce
  9. Parmazan cheese
  10. Bake on 400 until bubbly and cheese is melted about twenty minutes
  11. Prepare spaghetti noodles as usual
  12. Place noodle on plate then a square of chicken eggplant parm right on top serve with garlic bread salad and a nice glass of wine (optional lol!)
