Stuffed Shells…an easy homemade meal!

Stuffed shells are one of my favorite meals to make for my family for dinner. I like that you totally personalize it. If you want it vegetarian then bump up the veggies; I like to add broccoli! You can even add cooked sausage or chicken and it's a full meal.
This makes a great freezer meal too! When I make this I usually make enough for 2 meals. I then freeze one and had it later for a quick home cooked meal!
Stuffed Shells
Easy weeknight pasta dish. Use giant shells for this recipe.
Ingredients
- 1 box of jumbo pasta shells
- 1 jar of marinara sauce
- 1 15 oz. tub of ricotta
- 1 cup of shredded mozzarella plus 1/2 cup for topping
- 1 egg
- 1-2 T Italian Seasoning
- 1 1/2 cups of chopped spinach
- salt and pepper
Instructions
- Cook the pasta shells according to the package.
- In a medium bowl mix together the ricotta, 1 cup mozzarella, egg, seasoning, spinach and salt and pepper.
- In a large casserole dish pour about 1/3 of the marinara sauce and spread it around to cover the bottom.
- Stuff each shell with a large spoonful of the cheese mixture. Pour the remaining sauce over top and sprinkle with cheese.
- Cover with foil and bake at 350 degrees for 30 minutes
- Enjoy!
