Easy Recipe for Banana Bread
Banana bread is one of those things that I always thought about making, but I wouldn't have a recipe handy that was quick and easy. I love homemade baked goods but often don't want to set aside an hour to mix up.
This banana bread is so easy, you will want to add it to your regular recipe collection. You can adapt it to your liking, so if you've always added chocolate chips, walnuts, or pecans, add whatever you prefer! I love just about any kind of nut in banana bread.

Banana Bread Ingredients:
This bread starts with all the regular bread ingredients, and then of course some very ripe, brown bananas. I like to start with 4-6 bananas, since sometimes one will be a little too rotten to use.

Whisk together your dry ingredients first. I love my Pampered Chef Whisk but any large whisk will work fine.

This recipe resembles cookie dough as you make it. You will add the oils and eggs to your dry ingredients, so the entire batter will actually be pretty soft.
At this point I switch to a spatula or large spoon to stir the batter. It will be thin but that's ok!

If you have kids helping this is a great time to let them join in on cooking. With younger kids, often those firm cake batters and bread doughs can be difficult to stir.
Let them mix in the oil and eggs, and next the bananas for some fun in the kitchen!
It's up to you as to what you want to mash your bananas with. I like them really mashed! No large chunks of banana for me– no thanks! So I will give them an extra few good mashes with a fork before adding them to my batter. Break up any large clumps.

Baking Your Banana Bread:
If you have a loaf pan, just grease it well and add your bread batter/dough. You can also use parchment that extends over the sides if you prefer. It should come out of the pan easily either way, however.
I like to cool mine on a wire rack, and then set it on a firm surface to cut. Each loaf can be cut into thick slices, so you can get 8-10 slices per loaf. The nutritional information listed is for 8 slices per loaf, which is fairly large. For snack sized pieces, cut each one of those in the middle.

I've made dozens and dozens of loafs of banana bread and I will tell you that this recipe is a keeper!! It turned out fabulous. The best part is how easy it was to make. You only need 1 bowl…that's right 1 bowl! So clean up is a breeze.

BANANA BREAD MUFFIN RECIPE:
Best Banana Bread Ever

I named this banana bread the Best Ever since it has so many amazing elements: vanilla, nuts, and more!
Ingredients
- 2 cups Flour
- 1 cup Sugar
- 1 teaspoon Baking Soda
- ½ teaspoon Salt
- ½ cup Oil
- 2 Eggs
- 3 very ripe Bananas, mashed
- 1 teaspoon Vanilla
- optional- 1 cup chopped walnuts, pecans or chocolate chips
Instructions
Preheat oven to 350 degrees and prepare a bread loaf pan with cooking spray.
In a large bowl mix together dry ingredients; flour, sugar, baking soda and salt.
Then add the oil and eggs.
Mix together.
Add the mashed banana and vanilla. Mix until all ingredients are combined.
Fold in nuts or chocolate chips if wanted.
Pour into greased pan.
Bake for 50-60 minutes, or until a toothpick comes out clean.
