Zucchini Muffins

These zucchini muffins are easy to make and are yummy! Even your picky eaters won't mind eating their veggies! If you want, you can add a handful of chocolate chips to sweeten it up alittle.

These are a perfect breakfast or snack for busy summer mornings!

Zucchini Muffins

Instructions

  1. In a medium bowl cream together both sugars, veggie oil, and eggs. Add zucchini.
  2. In another medium sized bowl sift together the flour, cinnamon, baking soda, baking powder and salt.
  3. Slowly combine the dry ingredients with the wet. Mix until blended. Fold in nuts.
  4. Pout batter into lined muffin tins until they are 2/3 full.
  5. Bake at 325 degrees for 35-40 minutes or until tops are starting to brown.
