Homemade Coconut Milk
I'm always amazed at how easy some things are to make. My mother-in-law came to visit and showed me hot to make coconut milk. This is a great option for those who can't have dairy and soy. Plus it tastes awesome in smoothies!
Coconut Milk
Ingredients
- 2 cups shredded coconut
- 4 cups water
Instructions
- Put the coconut and water in the blender. Start on low and increase to high. Blend on high for 3 minutes.
- Strain the milk through a thin cotton cloth. Once all the milk has gone through the cloth, squeeze it to get as much moisture out as you can.
- Pour the milk into an airtight container. Discard after 1 week.
- What's left in the cloth is coconut flour. Spread it out on a baking sheet and place in the oven for 30 minutes at 250 degrees. This will dry it out and then it's ready to be used!
