Homemade Coconut Milk

I'm always amazed at how easy some things are to make. My mother-in-law came to visit and showed me hot to make coconut milk. This is a great option for those who can't have dairy and soy. Plus it tastes awesome in smoothies!

Coconut Milk

Ingredients

  • 2 cups shredded coconut
  • 4 cups water

Instructions

  1. Put the coconut and water in the blender. Start on low and increase to high. Blend on high for 3 minutes.
  2. Strain the milk through a thin cotton cloth. Once all the milk has gone through the cloth, squeeze it to get as much moisture out as you can.
  3. Pour the milk into an airtight container. Discard after 1 week.
  4. What's left in the cloth is coconut flour. Spread it out on a baking sheet and place in the oven for 30 minutes at 250 degrees. This will dry it out and then it's ready to be used!
  5. Enjoy!
