Healthy Chocolate Chip Mini Muffins – Guilt Free & Yummy!

I just made these Mini Chocolate Chip Muffins today and I must admit that I could have eaten all of them by myself…I didn't but I definitely could have!

These awesome mini muffins are gluten free, grain free and have no white sugar! I like making them because you make them in the blender so it's easy to clean up.

Give them a try, you won't regret it!

Healthy Chocolate Chip Mini Muffins

Ingredients

  • 1 medium ripe banana, peeled
  • 1 large egg
  • 1/2 cup creamy peanut butter
  • 3 tablespoons honey
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon baking soda
  • pinch salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 350 degrees.
  2. Put all the ingredients into blender except the chocolate chips. Mix on medium speed for about 2 minutes until the batter is smooth.
  3. Pour into a bowl and mix in the chocolate chips. You can leave it in the blender but don't turn it on with the chocolate chips or they'll get chopped up, just had mix them in with a spoon.
  4. Grease a mini muffin pan. Fill 18 cavities until they are 3/4 way full with batter.
  5. Bake for 10 minutes or until golden brown.
