Healthy Chocolate Chip Mini Muffins – Guilt Free & Yummy!

I just made these Mini Chocolate Chip Muffins today and I must admit that I could have eaten all of them by myself…I didn’t but I definitely could have!

These awesome mini muffins are gluten free, grain free and have no white sugar! I like making them because you make them in the blender so it’s easy to clean up.

Give them a try, you won’t regret it!

Ingredients

  • 1 medium ripe banana, peeled
  • 1 large egg
  • 1/2 cup creamy peanut butter
  • 3 tablespoons honey
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon baking soda
  • pinch salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 350 degrees.
  2. Put all the ingredients into blender except the chocolate chips. Mix on medium speed for about 2 minutes until the batter is smooth.
  3. Pour into a bowl and mix in the chocolate chips. You can leave it in the blender but don't turn it on with the chocolate chips or they'll get chopped up, just had mix them in with a spoon.
  4. Grease a mini muffin pan. Fill 18 cavities until they are 3/4 way full with batter.
  5. Bake for 10 minutes or until golden brown.

I grew up using a sewing machine, and doing a lot of similar needle craft such as crochet and embroidery. For many of us, this was the case. But I know there are a lot of folks who were more into other hobbies growing up, like the outdoors, books, art and other things! Even if you’ve never been into sewing, you can still try out a fun sewing-based DIY now and then. Click here to see how you can make this easy bowl cozy!
