Bulgur Wheat Salad Recipe
Now that the kids are older Summer road trips seem to be happening more and more lately. When you are gone on a week long road trip, eating out can get expensive. In just few short weeks we are going to be heading to Schlitterbahn Water Parks who actually encourages families to bring in their own ice chest full of food and drinks. This is the one of the best things about being a family fun oriented water park. It enables my family to eat healthy and helps mom and dad cut down on the cost. No more waiting in long food lines which means more time to spend having fun with my family on the rides. So it's now easier to stick to my budget and I know when I go I only have to pay for park admission because even the parking is free.
If you are looking for some different recipes to pack in your ice chest you should check out this Bulgur Wheat Salad Recipe. This recipes started as a classic Tabouli salad but, through the years has evolved to include other veggies that I love. It makes a huge bowl but can be halved easily.
Bulgar Salad
Nanas recipe
Ingredients
- 1 package Taboleh Wheat
- 1 cup boiling water
- 1/2 cup fresh lemon juice, no bottled juice
- 1/2 cup olive oil
- salt and pepper
- 1 cucumber diced
- 4 celery ribs chopped
- 3 carrots diced
- 1/2 yellow bell pepper diced
- 1 bunch green onions sliced
- 2-3 to matoes diced
- 2 bunches parsley
- salt and pepper to tast
Instructions
- Empty package of wheat into large bowl
- Stir in the one cup of boiling water into bowl with wheat
- Add lemon juice and olive oil
- Salt and Pepper to taste - I start with 1 teaspoon salt and 1/2 teaspoon pepper
- Mix well and allow to sit until cool
- Meanwhile, chop all you veggies and add to cooled bulgar
- Taste to ensure you have enough lemon, salt and pepper
I make this salad when I get home from the grocery store and keep it in the fridge all week for an easy lunch or side salad. You can add tuna, chicken or even Hummus, to change things up a bit.
