A pork roast slow cooker option is a classic dish that the entire family will enjoy! This recipe for balsamic pork roast slow cooker is easy to make, and with meat costs increasing it's one that usually comes in at lower cost than other main dishes.
Balsamic Pork Roast in the Slow Cooker

I just love a good slow cooker recipe. You can put a few ingredients into the crock pot, turn it on, walk away and come back a few hours later to a wonderful meal! Ah-mazing!!
How to Make:
You're going to start with a lean pork roast, often ccalled a pork shoulder or pork butt. If you can't find a pork shoulder roast you could do this with a pork loin roast or pork chops as well. Some people call this slow cooker honey balsamic pork loin because honey is one of the ingredients and gives it some sweet flavor.
This Balsamic Pork Roast can go straight into the slow cooker with just a few ingredients. I love this, since sometimes my time in the morning is very limited and I am thinking about what I can throw together in under 10 minutes of prep time!
Season the pork by rubbing it with the fresh garlic and sprinkling it with the salt, garlic powder, pepper and red pepper flakes. Pork has a lot of natural fats within the meat, but if you need to you can alwasy drizzle with olive oil to help your spices stick better. Place in slow cooker.
Mix together the broth and balsamic vinegar together and then pour over the pork. Then pour the honey over the pork! This is what gives it a ton of flavor so don't skip this step. Your cook time will vary whether you're using high or low setting. You will cook for 4 hours on medium or high heat or 6-8 hours on low.
Slow cooker hack: If you have the time, roasts generally have a better texture if you slow cook them on low, for the longer time period. You can always use a meat thermometer to check internal temperature and make sure your roast is cooked properly. All pork and poultry should be cooked to 165 F internal temp!
This Balsamic Pork Roast is perfect for those busy weekdays. All these ingredients should be right in your pantry, so it also makes a great thing to add to the menu with only 1-2 items to add to the shopping list. This recipe is also very versatile. I love going through my pantry to see what ingredients I have to throw in. You could play around with adding some soy sauce, onion powder, brown sugar, maple syrup, apple cider vinegar or chicken broth to make it your own.
I have a pressure cooker, can I adapt this recipe?
Yes! Don't forget some instant pot machines also have a slow cooker option on them. The nice thing about having an electric pressure cooker/multi-cooker such as the Instant Pot is that you can actually sear your meat in the same pan. you're slow cooking it in.
Just add a little olive oil and use the saute setting on medium high heat and sear all sides of your pork roast. Then, add your cooking liquid and the rest of your spices and switch over to Slow Cooker setting. The searing of the meat locks in lots of moisture and will give it a great flavor. Bonus- no extra dishes!
Ideas for Sides:
This Balsamic Vinegar Pork Roast is a main dish that you can serve with so many different side dishes. I served it with potatoes and carrots, but this would also be good with sweet potatoes and cole slaw. You can keep it low carb by just serving vegggies, make a delicious meal for the family with mac and cheese, vegetables, and baked beans.
If you prefer the pre-made mixes like Knorr Rice Pilaf that would be a great addition. You can also serve with brown rice and some green veggies like Brussels Sprouts, Green Beans, or even Asparagus. It's a great well-rounded dinner. The flavors of Balsamic Vinegar remind me of Mediterranean and Italian cuisine, so I prefer sides that compliment those flavors well.
Leftovers!
After I made this last week I used the left overs to make sandwiches…which were fabulous! You can save any leftover balsamic sauce (or balsamic mixture) to use as a dipping sauce.
If it's just two of you and you have leftovers, you can store them in an airtight container. This balsamic pork roast slow cooker is a delicious recipe that can be prepped ahead of time and frozen then just add to the slow cooker. Leftover pork does really well as it has a higher fat content than many proteins, so it doesn't dry out. And, you can actually re-season pork for other meals. We often turn leftover pork into taco meat by adding a bunch of chili powder, cumin, and some more garlic! It's basically good with any meal.

Balsamic Pork Roast
Try this main dish with just about any of your favorite side dishes! The balsamic vinegar adds a ton of flavor!
Ingredients

- 2 lbs Pork Roast
- Salt and Pepper, pinch of each
- 1 teaspoon red pepper flakes
- 1 Tablespoon mince garlic
- 1/4 cup broth
- 1/2 cup balsamic vinegar
- 1 Tablespoon honey
Instructions
Season the pork by rubbing it with the garlic and sprinkling it with the salt, pepper and pepper flakes. Place in slow cooker.
Mix together the broth and balsamic vinegar together and then pour over the pork. Then pour the honey over the pork.
Cook for 4 hours on high or 6-8 hours on low.
One the pork is cooked remove and shred. This should be very easy to do with a fork.
Return to the slow cooker and keep warm until you are ready to serve.
Notes
Optional: Use Meat thermometer to ensure Pork is finished cooking.
