Celebrate St. Patrick's Day with these Fun and Easy St. Patrick's Day Cupcakes!
If you have kids at home, you're probably thinking of ways to add something special– or green– to their routine to celebrate St. Patrick's Day! These fun cupcakes are a perfect way to surprise the kids after school with a little St. Patrick's Day treat.
I love this recipe since it' doesn't involve a huge amount of prep work. These come together with a cake mix, some green food coloring, and some creative rainbow and gold themed candies.
This simple rainbow and gold coin cupcake theme would work for a school classroom treat or class party. These are great for individually wrapped treats. You can place each cupcake on a plate or disposable bowl to keep contact to a minimum for this dessert idea.
What You Need:
For this recipe, add the following items to your store shopping list:
- Cupcake Liners (any will work)
- Vanilla Cake Mix
- 2 tubs of Green cake or cupcake icing (you can use store bought icing). If your store doesn't have green icing, try Vanilla or Cream Cheese Icing and just add green food coloring.
- Green Food Coloring, if needed
- Gold Coins (Chocolate Covered Candy Coins)
- Rainbow Airheads Extremes
You can find the Rainbow Airheads Extremes and the Gold Coins at Dollar General, or perhaps Dollar Tree. In the grocery store you can look in the candy aisle. They may even have them in the bulk candy! Alternately you could even use rainbow candy straws if you can't find the Air Heads Rainbows. We're sure the kiddos won't complain. 🙂
Make Your St. Patrick's Day Cupcakes:
After you've gathered your key ingredients, just prep the cupcakes according to the package directions.
In a small bowl, combine both tubs of frosting and mix your green food coloring in very well. I like to use my whisk to get it completely mixed.
Add to a piping bag and give each cupcake a good amount of frosting… They do need a lot just so that the Airheads Rainbow Extremes candy will stay put. Don't have any food coloring handy? Just go with white icing and you can have a rainbow in the clouds! There's really no wrong way to make these simple St. Patrick's Day Cupcakes!
If you have any St. Patrick's Day sprinkles, feel free to add that on top. I had some fun baking sprinkles I found on Amazon.

Easy St Patrick's Day Cupcakes
These vanilla cupcakes are SO easy! You'll have St. Patrick's Day dessert done in no time!
Ingredients
- Cupcake Liners (any will work)

Instructions
Prepare cake mix according to package directions for cupcakes. Most 9 x 13 size mixes make 2 dozen cupcakes.
Prepare 2 muffin tins with cupcake liners and bake for 18-22 minutes, taking care not to overbake cupcakes. Allow to cool for 10 minutes and set cupcakes on a serving dish or cooling rack.
In a separate bowl, combine frosting and food coloring, if needed. Mix well with whisk until all food coloring is incorporated.
Fill piping bag with green icing and after cupcakes are completely cooled, pipe with large star shaped tip. Give each cupcake about 3 loops of green icing.
Cut each Rainbow Airhead Extreme candy in half and loop over the tops of the cupcakes. Secure each end into the green frosting on half the batch of cupcakes (12).
Optionally, add St. Patrick's Day sprinkles, Rolo candies for "Pots of Gold" or any other embellishments you prefer.
Add Gold-wrapped Chocolate Coins to cupcakes to the other half of the batch.
