I have two teenagers in high school and they say that breakfast is one of the most important meals of the day. Sometimes I feel like this is one of the hardest meals because my kids literally get up so early that they are always rushing around. It's really one of the busiest times of the day. So I started getting creative with semi homemade meals.
This Crockpot Breakfast Casserole can be made the night before and is done first thing in the morning. So even if they get up before me they can simply lift off the lid and scoop it out themselves and mom gets an extra hour of sleep!
I love this recipe because it's so versatile. You can use different cheeses depending on your taste and you could do sausage, bacon, smoked sausage or whatever meat you like. If your kids are veggie eaters try adding bell pepper, mushrooms and or onions.
Unlike most breakfast casseroles, this one can be completely made the night before! It works best using Crockpot Liners, in case the edges get crispy. If your Crockpot runs very hot or is an older model, you might consider trialing this recipe out during the day first.

Crockpot Breakfast Casserole
This make ahead casserole is the perfect breakfast comfort food!
Ingredients
- 1 pkg of Oreida Frozen Hashbrowns
- 1 cup of Milk
- 1 dozen eggs
- 1 lb bacon
- 1 pkg of sausage
- 1 green pepper diced
- 1/2 cup of onion
- 1/4 garlic powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 cups shredded cheddar cheese
Instructions
- Place crockpot liner in your crockpot and spray it with olive oil.
- In a medium bowl mix eggs, garlic, salt, pepper and milk together.
- Add a layer of frozen hash browns
- Add layer of cooked sausage
- Add layer of green pepper and onion
- Add layer of cooked bacon
- Add layer of cheese.
- Do this 2 more times
- Pour egg mixture over the top.
- Cook on low for 7 to 8 hours. If you start this around midnight it will be done when you wake up in the morning.
Notes
Cooking time approximate. Check for done-ness prior to 7 hours if your slow cooker runs hot.

Do you cook the sausage and (especially!) the bacon before layering? If not, doesn’t the bacon end up limp and unappetizing?

Do you pre- cook the bacon and sausage?
I would like to feed a large crowd- if I double this, will it take longer? I would like it to be ready at 10 AM, but don’t want to stay awake until one or two in the morning. 😉
I honestly haven’t tried but you could do it in 2 crockpots at the same time.
what can I use if I don’t have a crockpot liner?
You can put all the ingredients in without one. It’s not needed, just easier to clean up your crockpot later if you use one 😉
The recipe says “¼ garlic powder”. I take that is 1/4 tsp. of garlic powder, correct?
