Taco Soup Recipe in Slow Cooker
Who doesn't love tacos? And who doesn't love soup? Combine the two and you have an easy dinner that will tantalize your taste buds. This taco soup recipe in slow cooker is perfect for a cold day. It's hearty, filling, and best of all, it's one of those delicious soup recipes your whole family will love (even those picky eaters!). So put on your favorite apron and let's get cooking!

Let's get started –
Even though this is a slow cooker taco soup recipe you will need to brown your ground beef in a large skillet over medium heat or medium-high heat. If you are looking to make this crock pot taco soup recipe a little healthier you can use lean ground beef or ground turkey. Sometime we will add a diced small yellow onion to our meat. You can even brown the meat the night before. This is a great way to save some prep time the next day. After your ground beef is browned, drain the excess grease off of the browned beef.
Slow cooking –
Transfer the browned meat to a large slow cooker. Now is the time to add the rest of the ingredients. Just dump your pinto beans, kidney beans, canned tomatoes, green chilies, corn, taco seasoning mix, ranch dressing mix, and your 4 cups water. We try to keep homemade taco seasoning on hand. This way we can control the heat level. Here is the recipe to what we use!
Once everything is in your slow cooker just set it on low for 6-8 hours. That's it!

After 6-8 hours of cooking this flavorful soup will be ready to eat. You can add a variety of toppings but we like to add tortilla strips or corn tortilla chips, cheddar cheese, and a dollop of sour cream. What makes this taco soup recipe slow cooker one of my favorite recipes is that is uses a lot of pantry staples. During soup season we keep most of these ingredients on hand. Our entire family loves this delicious recipe!
What is nice about this dish is you could substitute the pinto beans for black beans or add some green onions to top off your soup. You could also substitute the water with beef broth, chicken broth, or chicken stock on this easy crockpot taco soup. Get crazy and even use a shredded chicken breast instead of your ground beef. Don't be afraid to experiment! My husband adds hot sauce to his sometimes too! It's such an easy recipe to tailor to your families likes!

Don't have a crockpot? No worries you can just cook this hearty soup in a large pot on the stovetop! Cook on low heat until everything is heated through.
Daniel's Taco Soup
Ingredients
- 2 pounds ground beef
- salt and pepper to taste
- 2 cups diced onions
- 2 15 1/2-ounce cans pinto beans
- 1 15 1/2-ounce can red kidney beans
- 1 15 1/4-ounce can whole kernel corn, drained
- 1 14 1/2-ounce can diced tomatoes
- 2 4 1/2-ounce cans diced green chiles
- 1 1 1/4-ounce package taco seasoning mix
- 1 1-ounce package ranch salad dressing mix
- 4 cups water, you can use more or less depending on how thick you like it
Instructions
Brown the ground beef and onions in a large skillet (salt and pepper to taste); drain the excess fat.
Transfer the browned beef and onions to a large slow cooker.
Add the beans, corn, tomatoes, green chiles, taco seasoning, and ranch dressing mix, water and cook in a slow cooker on low for 6 to 8 hours.
To serve, place a few tortilla chips in each bowl and ladle soup over them. Top with sour cream, cheese.
Notes
Serve with tortilla trips and garnish with shredded cheese and sour cream.
