Peaches and Cream Bars are a happy mix between peach pie and peach cobbler and is a fantastic summer dessert! The star of these bars are the chunks of peaches between a layer of cake mix crust and a smooth cream cheese filling topped with cake mix crumbles. It is such a simple dessert and a great option when you're looking for something light, fresh and easy!
These would be great at a BBQ, church potluck, picnic or any time you're just craving some dessert! One of my favorite things about this recipe is that it can be made ahead of time. I love when I can make something the day before I need it!
I haven't tried it yet but this may be great to try with other canned fruits such as cherries, blueberries and apples! Can you imagine how great this would be with apples in the fall?!? Oh, yum!!

Peaches and Cream Bars
Make any time with canned peaches, or substitute fresh summer peaches.
Prep Time10 minutes
Cook Time30 minutes
Total Time40 minutes
Ingredients
1 box yellow cake mix
1/3 c. butter, room temperature
2 lg. eggs
2 14 oz. cans of peach slices, well drained
8 oz. cream cheese, room temperature
1/3 c. sugar
1 tsp. vanilla extract
Instructions
Preheat oven to 350 and spray a 9x13 pan with cooking spray.
Combine cake mix, butter and 1 egg in a large bowl. Mix on low or mix with a fork just until crumbly. Set aside 1 c. crumbs for topping.
Press the remaining crumbs on the bottom of your prepared pan. Bake 10 minutes in preheated oven.
Cut peach slices into 1 inch pieces. Spoon onto the partially baked crust.
In a large bowl, combine cream cheese, sugar, and vanilla. Beat until creamy then spread over the peaches.
Sprinkle with reserved crumbs. Bake 30 minutes.
Cool almost completely before placing in the refrigerator. Cool at least 30 minutes before serving.
