Garlic Parmesan Kale Chips- and Wanting to Eat Healthier!

Who knew that getting into essential oils would lead me down a path to wanting to eat healthier and completely change the way I think. I have never been a vegetable eater besides the basic, corn, potatoes, green beans and carrots so I never really gave them to my kids when they were little.

I had just turned 21 when I had my first child so I think I was still pretty young in my thinking. If I could turn back the clock I would totally change the food choices I made. I am trying to do the best I can now in educating my children the importance of healthy eating and trying new foods without completely taking away the things that they love. It's all about finding that balance.

Then and Now:

I started with small changes, replacing little things here in there that they really didn't notice and then once they had been eating them for awhile I told them what they were eating and they were like, that was organic?

Fast forward to recently: we visited a local farm here in Edmond where you can either pick your own veggies or they will pick them for you. They are all organic and Non – GMO which is even better. I decided to go outside my comfort zone and pick up a few things that I had never tried.

One of them being kale. I brought it home, sat it down on the counter, and stared at it a bit like it was some alien life form.  How the heck was I going to get my family to eat this? Then I remembered my friends all talking about kale chips, OK that was a start but what the heck do you put on them?

Cooking with Kale:

Well most of my friends just used some sea salt and olive oil but I knew I needed to go a little above and beyond that with my family and then I remembered how much my daughter loves garlic. She will pretty much eat anything with garlic on them. So I came up with this Garlic Parmesan Kale Chips recipe and to my surprise both my husband and my daughter loved them. My son however was still kind iffy.

It's important to wash and dry your Kale, just as with any ground vegetable. Rid the grit, dirt, and other junk off your fresh veggies! Then, dry the kale using paper towels or a Salad Spinner.

Add your kale to a med – large bowl and drizzle olive oil over the top of them.
Add garlic, parmesan and salt and toss till well coated.  Finally, lay the kale out on a baking sheet. Don't forget to remove the stems as they become hard when you cook them.

My husband walked into the kitchen and gave me a kiss on the cheek and said “Honey, thank you for trying to keep our family healthy” this coming from a man who can eat candy for breakfast , lunch and dinner. Man I felt like I had just won the blue ribbon at the fair.

Garlic Parmesan Kale Chips

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes

Ingredients

  • Olive Oil
  • 1/4 tsp salt, Himalayan Sea Salt
  • ½ tsp garlic, or 1 tsp minced to taste
  • ½ cup parmesan, grated not shredded

Instructions

  1. Preheat oven to 375 degrees
  2. Wash and dry your kale. A salad spinner works wonders. Don't forget to remove the stems as they become hard when you cook them.
  3. Add your kale to a med - large bowl and drizzle olive oil over the top of them.
  4. Add garlic, parmesan and salt and toss till well coated.
  5. Layer on a baking sheet and cook for 15- 20 mins or until golden brown.
