Shamrock Eggs for St. Patrick’s Day

Shamrock Eggs for St. Patrick's Day
I remember my mom making green foods just for fun on St. Patrick's Day. I will always remember how everything was green! This may not seem exactly as appetizing for adults, but for kids it was fun and memorable. Now that we don't have any little ones around the house to make St. Patrick's Day treats for, we sometimes like to make healthy foods that are also fun to enjoy around holidays.
These Shamrock Eggs are made with a large, clover shaped green bell pepper and a single fried egg. They are incredibly easy to make, so if you're wanting a fun recipe idea for breakfast or dinner, this one is a must-try.
How to Make:
First, heat up a large skillet with non-stick spray. You can also use a cast iron pan, just make sure to have it seasoned and have your oil hot before adding your ingredients. Eggs are known for sticking, so be sure to use room temperature eggs and a hot skillet for best results.

Not sure you have time to warm the eggs up to room temperature? No problem! Just fill a small bowl with hot water from the sink. It should be hot to the touch but not boiling. Add your eggs (before breaking them) to the water and allow to sit 5-10 minutes. Eggs will not cook, but they will now be brought up to close to room temperature!
Next, on a cutting board and with a large knife, clean and slice a large bell pepper in half horizontally. You will need a bell pepper with four points on the bottom. They can be found with three or four points in grocery stores. Slice all the way through the pepper. Then, about 1/4″ away from your original slice, cut the pepper again, making a “ring” with the green bell pepper. This will be your shamrock!
Cooking Your Shamrock Eggs:
Add the bell pepper to the skillet first. Then carefully break your egg into the space inside the ring. Some egg may seep under the green bell pepper. You can take a spatula and hold down the green bell pepper ring against the skillet to avoid your egg running out. After a moment, the egg will have cooked and will not spread out any more. Then, immediately cover the skillet with a tight lid. Use a low heat. Allow the eggs to cook until the whites are completely cooked but the yolks are still runny. The yolks should have turned a deep yellow and appear to be heated and cooked, but not solid. This should take 2 to 2 1/2 minutes. For more set yolks, allow to cook for up to 5 minutes.

Shamrock Eggs, for a fun St. Patrick’s day breakfast!

Ingredients
- 1 green bell pepper
- 2 eggs
- optional: shredded cheese, ham, mushrooms..etc
Instructions
- Warm a skillet on medium heat.
- Cut the top off of the green pepper and remove the insides. Lay the pepper on it's side and cut into slices that around about 1/2 inch thick. You will need at least 4 slices.
- Beat 2 eggs.
- Generously spray the skillet and put 1 or 2 pepper slices on. Let cook for 1 minute and flip.
- Spoons about 1/4 of the egg mixture into the pepper. Sprinkle with cheese and any other filling.
- Let cook until egg has reach desired doneness...aprox 1 1/2 minutes.
