Mini Yogurt Bites
Getting in a quick and healthy breakfast is an essential part to starting your day off right. The quick is easy, but the healthy aspect can be a little harder to accomplish when you're in a hurry.
These delectable Mini Yogurt Bites are the exception! If you're normally not a yogurt fan– don't worry. Frozen yogurt has an entirely different texture! We topped these with fruit, but you can also do chocolate chips, granola, or just about any topping you can think of.

How to Make:
I used a mini muffin tin for this recipe, but you could opt to use a regular muffin tin if needed. The only difference of course is that the Mini Yogurt Bites wouldn't actually be “mini”. 🙂
We start by adding granola to the bottom of each paper muffin cup. You can also use silicone muffin cups if you have those on hand.
The granola allows me to add some extra flavor, and it balances out the soft texture of the frozen yogurt. I would use a typical, store-bought granola for this recipe. Choose one without raisins or dates, since those may alter how well your Mini Muffin Cups stick together.
Add your yogurt, and top with berries. I make these right in the muffin tin, so I can then set the entire thing together inside the freezer. The mini muffin tin size do not take long to freeze at all! You can then transfer to a large, freezer safe dish so they don't get a freezer taste.

Gluten Free Mini Muffin Cups– and More:
I love that there are so many gluten free granola options you can use for this recipe, as well. Nature's Path Gluten Free Granola with Summer Berries or Honey Almond are definite crowd pleasers. I stuck to fruit flavored yogurts here, but you can definitely go with vanilla or even a fun Key Lime or Strawberry Cheesecake flavored yogurt if you choose.
Chocolate frozen yogurt with strawberries on top sounds tempting to me! I hope you enjoy these frozen fruit-topped Mini Yogurt Bites. Don't forget to store in an airtight container to keep them fresh.

Mini Yogurt Bites

Ingredients
- 1-1 ½ cups of low fat granola
- 2 5 oz. Cartons of Mixed Berry Yogurt-- Use Yoplait Greek 100 or Dannon Triple Zero for a low sugar option.
- 1 pint blueberries, strawberries, hulled and halved
Instructions
Place liners in muffin tin
Drop a tablespoon of granola in each tin or enough to cover the bottom
Fill tins three-quarters of the way full of yogurt
Top each tin with 1-3 berries, depending on the size of the fruit and the combination you use.
Freeze for 1 hour or until yogurt is no longer soft.
Enjoy!
Notes
You can use Vanilla or another yogurt flavor if you wish! Get creative and use your favorites!
