I made this Lemon Spinach Chicken for dinner the other night and it was out of this world! I may have licked the plate clean it was so good! I made it and put it over pasta but the next time I'm going to serve it with mashed potatoes. The chicken has a nice flavor paired with the creamy sauce with a hint of lemon. Delish!

Lemon Spinach Chicken

Ingredients

  • 6-8 Boneless, Skinless Chicken Breasts
  • salt and pepper
  • 1 tablespoon paprika
  • 3 tablespoons butter, divided
  • 3 tablespoons minced garlic
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup freshly grated Parmesan
  • Juice of 1 lemon
  • 2 cups baby spinach, chopped

Instructions

  1. Cut each chicken breasts into 2 or 3 smaller pieces. Salt and pepper to taste. Sprinkle with paprika.
  2. Preheat oven to 400 degrees F.
  3. Melt 2 tablespoons butter in a large skillet over medium high heat. Add chicken sear both sides until golden brown, about 2-3 minutes per side.Remove from pan and set aside in a 13x9 pan.
  4. Melt remaining tablespoon butter in the skillet. Add garlic and cook for 1-2 minutes until starting to brown. Stir in chicken broth, heavy cream, Parmesan,and lemon juice..
  5. Bring to a boil; reduce heat to medium, stir in spinach, and simmer until the spinach has reduced in size and the sauce has slightly thickened, about 3-5 minutes. Pour mixture over chicken in pan.
  6. Place into oven and roast until completely cooked throug about 25-30 minutes.
  7. Serve immediately.

  4. I keep seeing recipes that look delicious but then I come to the dreaded “spinach” part. My husband and I both detest spinach in any form. So what do we substitute for it? Don’t like kale either. Can you help because this looks really good?!

  6. Thank you for the recipe. I fully intended to make it as written. I made sure to pick up a lemon on my way home from work. I thought I was all set, turns out that I didn’t have parmesan cheese! Not willing to give up, or to go back to the store, I used feta cheese crumbles instead. Dinner was a hit! I still can’t wait to try it with the parmesan. Thanks
