I made this Lemon Spinach Chicken for dinner the other night and it was out of this world! I may have licked the plate clean it was so good! I made it and put it over pasta but the next time I'm going to serve it with mashed potatoes. The chicken has a nice flavor paired with the creamy sauce with a hint of lemon. Delish!
Lemon Spinach Chicken
Ingredients
6-8 Boneless, Skinless Chicken Breasts
salt and pepper
1 tablespoon paprika
3 tablespoons butter, divided
3 tablespoons minced garlic
1 cup chicken broth
1/2 cup heavy cream
1/4 cup freshly grated Parmesan
Juice of 1 lemon
2 cups baby spinach, chopped
Instructions
Cut each chicken breasts into 2 or 3 smaller pieces. Salt and pepper to taste. Sprinkle with paprika.
Preheat oven to 400 degrees F.
Melt 2 tablespoons butter in a large skillet over medium high heat. Add chicken sear both sides until golden brown, about 2-3 minutes per side.Remove from pan and set aside in a 13x9 pan.
Melt remaining tablespoon butter in the skillet. Add garlic and cook for 1-2 minutes until starting to brown. Stir in chicken broth, heavy cream, Parmesan,and lemon juice..
Bring to a boil; reduce heat to medium, stir in spinach, and simmer until the spinach has reduced in size and the sauce has slightly thickened, about 3-5 minutes. Pour mixture over chicken in pan.
Place into oven and roast until completely cooked throug about 25-30 minutes.

Not willing to give up, or to go back to the store, I used feta cheese crumbles instead. Dinner was a hit! I still can’t wait to try it with the parmesan. Thanks
