Pumpkin Spice Oatmeal Cookies

As the leaves begin to change color and the air becomes crisp, we know that fall is on its way. And with fall comes all things pumpkin spice. Pumpkin spice lattes, pumpkin spice candles, and of course, pumpkin spice oatmeal cookies! These cookies are the perfect blend of soft and chewy with a hint of sweetness. What's not to love?
I purchased Pumpkin Spice morsels a few weeks ago and tonight I decided to use them to make Pumpkin Spice Oatmeal Cookies. The morsels add just the right amount pumpkin spice flavor to these easy, yummy oatmeal cookies. I'd highly recommend adding these delicious cookies to your fall baking list!
What You Need:
- 1/2 c. butter, softened
- 1/3 c. granulated sugar
- 1/3 c. brown sugar
- 1 egg
- 1/2 tsp. vanilla
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/4 tsp. cinnamon
- 1 1/4 c. flour
- 1 1/4 c. quick oats
- 1/2 bag Pumpkin Spice Morsels
Pumpkin Spice Oatmeal Cookies

Ooey Gooey Goodness!
Ingredients
- 1/2 c. butter, softened
- 1/3 c. granulated sugar
- 1/3 c. brown sugar
- 1 egg
- 1/2 tsp. vanilla
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/4 tsp. cinnamon
- 1 1/4 c. flour
- 1 1/4 c. quick oats
- 1/2 bag Pumpkin Spice Morsels
Instructions
- Preheat oven to 375 degrees.
- Line baking pan with parchment paper or silicone mat.
- In a large mixing bowl, cream butter and sugars together until fluffy.
- Add in egg and vanilla and mix well.
- In a separate bowl, sift together baking soda, salt, cinnamon, and flour. Add to butter mixture and mix well.
- Stir in oats and morsels. (if you don't like the morsel chunks, just melt them first and stir in)
- Using a small cookie scoop, place cookie dough on the baking sheet and bake 9-11 minutes.

Old-Fashioned Oats vs Quick Oats
When it comes to baking, the choice between old-fashioned oats and quick oats can impact the texture and outcome of your treats. Old-fashioned oats are larger and provide a heartier, chewier texture, making them perfect for recipes like oatmeal cookies and granola. Quick oats, being finer and more processed, blend smoothly into batters, suitable for muffins and pancakes. While both types offer distinct qualities, selecting the right oats depends on the desired texture and consistency of what you are making.
Flatter cookie?
If you enjoy a flatter cookie you can press them out slightly with a spoon before you bake. This will ensure it spreads more as it bakes giving you a wider, thinner, cookie for those who like more of a crunch.
Refrigerate dough
Its recommended to refrigerate most cookie dough for at least 30 minutes in the fridge or even 24 hours, just warm them back up for a bout 5 more minutes or until just pliable. This allows the fats to cool and expand slower helping with the texture.
Storage
These Cookies will keep on the counter in a baggie for about 2 weeks or even 2 months in the refrigerator if u can keep from eating them that long. Either way, these cookies will last you until you eat them all up.
