Even picky eaters usually love the flavors of cheeseburgers. While soup may not be one of the usual family favorites, this one has ingredients like crispy bacon, lean ground beef, and of course cheese! It's like the soup form of the classic we love, and it's one of my family's favorite meals. And, if you don't have kids don't worry. This recipe can also be easily adapted as a low carb diet main dish.
This comforting soup recipe is made in the slow cooker, and can even count as a one dish meal if you have a slow cooker with a sauté or cook feature. If not, just use a large skillet to brown your ground beef or ground turkey prior to adding ingredients to the slow cooker. If you are needing an Instant Pot recipe, yes– this one can be used. How to Make:
First, you will need a heavy skillet. Heat over medium-high heat on the stove top and brown your ground beef or turkey. Be sure to use lean beef for this recipe, or opt for a ground poultry. If you must use a higher fat ground beef, rinse well and remove as much grease as possible prior to adding the cooked ground beef to the slow cooker. I used 80/20 the first time I made this, and I thought it would be much better with a leaner meat. Remember, we will be adding cheese which contains other fats.
After cooked, add your ground beef to the bottom of the slow cooker. Peel and dice red potatoes into small, uniform sized chunks. You do want them good sized, so at least 1″ chunks are ideal. Do not dice too small– they may end up being too mushy after cooking down if so.
Add your spices, beef broth (or chicken broth), and Velveeta Cheese to the slow cooker. Although you can place an entire block of cheese into the slow cooker, I find it helpful to divide it into larger chunks.
Spices to Add to Your Bacon Cheeseburger Soup Recipes:
Since I have two recipes for this soup–one for the slow cooker and one for the Instant Pot– I love to try out new spices when I made this soup. The best soup recipes always have plenty of seasoning! For this recipe, we add
- Freshly ground black pepper
- Dried minced onion flakes
- Garlic powder (or minced garlic)
- Worcestershire sauce
Fresh ingredients are totally OK if you would rather use them. I went ahead and added some fresh carrot, celery and onion to mine (pictured above). So you can throw in whatever veggies you have in the fridge. Use about 1/4 cup of each, chooped.
If you need an extra kick, you can always add dry spices such as parsley, oregano, or a small amount of Cajun seasoning. Be careful not to add too many salt-containing spices. The soup will have plenty of salt as the recipe card is written! You could also add a little diced onions or green onion if you'd like. I store the leftovers of this hearty soup in an airtight container and store in the fridge.
After the soup has completely cooked in the slow cooker, it's time to add the final ingredients! Turn the slow cooker to low heat and mix in the last ingredients. I have half and half in the recipe but you can use a whole milk or heavy cream instead. If you need a thicker soup, you can actually substitute cream cheese for the half and half. Be careful to use room temperature cream cheese so it doesn't “curdle” in the hot soup. Remember, any substitutions or additional add-ins may affect the flavors and will also change the nutritional values. I am the type of person to add whatever I have on hand though! Give it a final mix and you can serve this easy cheeseburger soup.
Toppings and Serving Your Soup
This soup doesn't need a lot of toppings. You can add some fresh parsley or red pepper flakes to make it look like a decadent soup. Chopped bacon or turkey bacon is usually the only thing I add here! I do chop the bacon into bite-sized pieces and fry on the stove top. You will need about a half pound of bacon if you are serious bacon lovers, or have a lot of people that will be adding it to their soup.
Do not add bacon straight to your slow cooker- as it tends to get a little mushy and doesn't add as much flavor! Using cooked bacon is ideal.
Along with the bacon, you can add a little bit of extra cheese for flavor. The flavors of the cheddar cheese soup and ground beef really stand out in this recipe, so you don't need a lot more to add! - 1-2 lbs diced and peeled red potatoes
- 1 lb hamburger cooked-- preferably a lean ground beef such as 90/10, or ground turkey or chicken
- 1/3-1/2 lb bacon, cooked and chopped
- 1 lb Velveeta cheese
- 5 cups chicken broth or beef broth
- 1 teaspoon pepper
- 2 Tablespoons dried onion flakes
- 1 teaspoon garlic powder
- 1 Tablespoon Worcestershire sauce
- 1/4 cup half and half
Sauté meat first and drain grease. If using a non-lean ground beef, rinse and drain off excess grease.
Add your hamburger, red potatoes, Velveeta Cheese, broth, dried onion flakes, garlic powder, and Worcestershire.
Turn on slow cooker to low and allow to cook for about 6 hours. Stir occasionally.
About 10 minutes before cooking time is finished, stir soup well and make sure all Velveeta is incorporated. Add half and half. If you need a thicker soup, you can substitute the half and half for 4 oz. of Cream Cheese at room temperature.
Continue to cook until all ingredients are blended. While soup is finishing, in a small sauté pan, cook bacon on the stove. You can chop into 1/2" pieces (kitchen shears work well) and brown until cooked thoroughly. If the bacon is crispy, that's ok.
Place on a separate plate to cool and chop the cooked bacon with a fork (or your hands) after cooled. Serve soup and add bacon and extra shredded cheese to the top.
Serve with corn bread, a salad, corn chips, and more!
Optional: You could also add a small pasta, corn, white beans, or carrots/onions/other veggies!
