It’s Not Too Late to Make Better Food Choices!
I can honestly say, we haven’t always eaten the best foods. Yes, my husband and I have gone for those convenience foods for snacks and meals over the years. We all know that adds up to a lot of carbs and sugar.
Being busy with work, parenting, and life in general can keep us from making the best food choices. After a while we knew we had to focus on eating better and taking care of ourselves. More recently, my husband and I started a low carb journey that has led us to discovering awesome new recipes and products! We are more excited about fresh foods, and don’t feel like we are “missing out” by choosing lower carb foods.
For anyone who is choosing to change their food choices for the better– first of all, congratulations! It’s completely doable! My husband and I were surprised at some of the new flavors and dishes we could enjoy using products that are lower in carbs!
Mission® Carb Balance Spinach Herb Tortilla Wraps
My favorite thing about the Mission® Carb Balance Spinach Herb Tortilla Wraps is their spinach flavor. They add a great taste to fresh wraps, which my husband and I enjoy now and then for a light lunch! When using these wraps in my enchilada recipe I found they are comparable to traditional
wraps or tortillas in texture and ease of use. Mission® Foods is focusing on offering Better Choices Made Easy, which I love!
Easy-to-use ingredients are a must for me. Even if I am just cooking a weeknight dinner for my husband and myself, my time is important! I am not a fan of complicated ingredients or recipes, so this product was perfect for my Low Carb Chicken Enchiladas recipe.
Mission® Carb Balance Spinach Herb Tortilla Wraps are packaged just like the flour tortillas I've always used. They are ready to go right out of the package.
With these wraps I did notice the zesty spinach flavor. I believe it complements the flavors of the enchiladas nicely. For those that prefer to have nutritional details before trying them out, each wrap contains 60 calories and 3g of net carbs. They also have Zero Trans Fat, Cholesterol,
and Zero Sugars.
I didn’t have to feel guilty about adding cheese and tomatillo sauce–some of my favorite flavors!
Enchiladas with Mission® Carb Balance Spinach Herb Tortilla Wraps:
This Low Carb Chicken Enchilada recipe was a hit for us. It was perfect for a weeknight dinner, so I will be adding it to my menu again! We chose to serve the enchiladas with our own homemade Salsa Verde (Tomatillo Sauce). My husband is the salsa expert around here, so he was in charge of that side dish!

Low Carb Chicken Enchiladas with Mission® Carb Balance Spinach Wraps!
These Chicken Enchiladas are made without flour tortillas, giving you a lower carb option for a classic main dish!
Ingredients
- ● 1 package of Mission® Carb Balance Spinach Herb Tortilla Wraps
- ● 1 /2 lbs. Skinless, Boneless Chicken Breasts (approximately 3)
- ● 2 cups chicken broth
- ● 1 tbsp. chili powder
- ● 1 tsp ground cumin
- ● 1 tsp smoked paprika
- ● 1/2 tsp dried oregano
- ● 1/2 tsp garlic powder
- ● 1/2 tsp kosher salt
- ● 1/2 tsp fresh ground black pepper
- ● 1 cup of Mexican Blend Cheese
- ● 1 cup of your favorite tomatillo sauce
- ● Cilantro for garnish
Instructions
Precook chicken breasts: Add chicken and chicken broth into electric pressure cooker.
Arrange chicken breasts side by side in bottom of the pot, and cover with broth.
Mix all spices together in a separate small bowl and then evenly sprinkle over the top of
the chicken.
On your Pressure Cooker, lock lid into place and select your pressure cooker setting and
cook for 10 minutes, following manufacturer’s directions.
Alow for natural pressure release (do not manually release) for 10 minutes.
Remove chicken breast and place into bowl and shred. (Two forks work well). If desired,
add a small amount of cooking liquid from your pressure cooker pot to give chicken extra
flavor.
Assemble Enchiladas: Add a small amount of chicken to each Mission® Carb Balance
Spinach Herb Tortilla Wrap. Roll and place into cast iron skillet, seam side down.
After you have added all of your enchiladas (5-6), pour tomatillo sauce over the top. Cover
with cheese.
Insert cast iron pan into preheated oven and cook for an additional 10 minutes, or until
cheese is melted.
Top with chopped cilantro (optional) and serve immediately.
Notes
Ensure chicken has been fully cooked and reads 165 degrees internal temp before shredding. You can opt to pre-cook chicken in the oven at 350 degrees for 15-20 minutes or until done.
